這一家店,真的是冰箱的獨家,因為當初一訪時這間在網路上面完全沒
資訊,Google Map的資訊還是當年我為了寫文設置的。一晃眼五年過去,
熊熊想起一查資料全部都還是我當年的,五年來都沒有其他人把資料做
更新跟分享。因為這家老闆滷肉的功夫真的超實力派,都沒人發現真的
是太誇張了,所以我是獨家中的獨家!
This store is truly an exclusive of mine, as there was no information about
it on the internet when I first visited. Even the information on Google Maps
was set up by me for the purpose of writing an article. It has been five years, 
and I just realized that all the information is still mine, with no updates or 
sharing by anyone else. This is because the boss's braising skills are truly outstanding and no one has discovered how amazing it is. Therefore, I am 
the sole proprietor of this exclusive!

正屏東三塊肉爌肉飯是這家店的店名,店名為何有正屏東?這個我在一訪
的文章中已經有討論過,大家有興趣可以點這個連結做參考。
The name of the restaurant is "Zheng Pingdong Three-Piece Pork Rice".

這家店跟我的店一樣都是老闆一個人校長兼撞鐘,所以這次去確定店還
在發現小菜品項跟之前有點不同。老闆有點年紀所以動作有比較慢一點
點,大家就帶著耐心來吃飯,讓老闆慢慢準備啦!
The establishment is comparable to my own business, where the proprietor 
fulfills the roles of both headmaster and chef. Upon my most recent visit, I confirmed that the business was still operational, and I observed that some 
of the small dishes had undergone slight modifications. The owner is of 
advanced age, resulting in a somewhat slower pace of movement. It would 
be wise for us to exercise patience while dining and permit the owner to 
prepare our food at his own leisurely pace.

菜單一樣手寫在白板上面,這塊價目表內容應該歲隨著季節跟食材做修
改,所以除了飯類之外,小菜品項僅供參考。
The menu is handwritten on a whiteboard, and the prices for non-rice 
dishes are subject to change depending on the season and availability of ingredients. Therefore, the side dishes listed are for reference only.

暌違五年又再度來吃這一碗,今天看到豬腳一定要單點一下,湯一樣免費。
這樣全部加起來才115元,真的是超級便宜。
After a five-year hiatus, I came back to have a bowl again. When I saw the 
pig's feet, I had to order them separately, but the soup was still free. 
The total cost was only 115 NT$, which is incredibly cheap!

肉飯(50元) 雖然隔了快5年才再度光臨,不過我發現老闆完全沒有漲價,
真的是佛系老闆。吃到一半有跟老闆聊天,他說這邊都是主顧客,大部分
是附近做工的,吃粗飽為優先考量,所以價格5年來都沒調整。
Although it has been almost 5 years since I last visited, I found that the 
owner of the braised pork rice (NT$50) did not raise the price at all. He 
truly is a laid-back boss. While I was eating, I chatted with the boss and 
he said that most of his customers are locals who work nearby, and their 
priority is to have a satisfying meal. Therefore, the price has remained 
unchanged for the past 5 years.

店名三塊肉就是取自他家的焢肉飯上面會出現三種不同部位的肉,說真的
現在市面上像老闆這麼講究把部位分開滷的小吃店,我真的沒看過。首先
這塊是帶皮的肥肉。
The name "Three Pieces of Pork" comes from the fact that their braised pork
rice dish contains three different cuts of meat. To be honest, I have never seen 
a snack shop on the market that is as meticulous as the boss in separating the 
cuts of meat. First of all, this piece is fatty pork with skin.

這塊肉真的是軟到不像話,但外型依然完整,夾的時候豬皮還一直冒油
出來,真的是太誇張的滷功。這邊有影片給你看皮冒油!!
This piece of meat is incredibly tender to the point that it seems impossible, 
yet the appearance is still intact. When I squeeze it, the pigskin keeps oozing 
oil, which is truly an outrageous braising technique. Here's a video for you to 
see the oil coming out of the skin!

滷好的肥肉本身入口即化,根本只用舌頭就可以處理他,愛吃肥肉的人
一定要來這邊試試看,保證你愛上他!
The braised fatty pork melts in your mouth and can be easily handled with 
just your tongue. Those who love fatty pork must come and give it a try here. 
We guarantee you'll fall in love with it!

瘦肉尤其是全瘦肉拿來滷,真的就考驗老闆滷肉的技術。一般爌肉飯店
多是皮、油跟肉一起下鍋滷。如果要滷到肥油入口即化,瘦肉的部分往
往都是火候太過變得又柴又乾。上圖這塊應該是三層肉去掉肥肉跟皮那
一段瘦肉,這個部位全瘦,要滷失敗非常容易。
Using lean meat, especially whole lean meat, to make braised dishes really 
tests the skills of the chef. Typically, restaurants that serve braised pork rice 
tend to cook the skin, fat, and meat together. If the goal is to cook until the 
fat melts in your mouth, the lean part of the meat often becomes dry and 
tough due to overcooking. The piece shown in the picture is probably a lean 
cut with the fatty and skin parts removed. This part is entirely lean, making 
it very easy to fail when braising.

大家看這肉的纖維水分還保持著,這樣的肉怎麼可能會柴啊????然後有的
店家這個部位的肉,還會吃到些許肉腥味,在彰化吃爌肉飯常遇到,但這
家的不會。
The meat's fibers and moisture are still preserved, so it's unlikely for it to 
be tough. Additionally, some restaurants serving this particular cut of meat 
may have a slight raw smell, which is a common occurrence in Changhua's 
braised pork rice, but not at this establishment.

三塊肉爌肉飯

最後這塊就厲害了,沒錯,他就是我們常用來做肉排的梅花肉。雖然這塊
肉也帶油,但瘦肉還是佔大部分的比例。再加上,梅花肉的瘦肉有大塊有
小塊,熟成時間也有些微不同,更加難滷。
The last piece is impressive indeed. Yes, it is the pork cut commonly used 
for making pork chops - the marbled pork. Although this cut of meat contains 
some fat, lean meat still makes up the majority of it. Moreover, the lean meat 
of marbled pork comes in different sizes and matures at slightly different 
times, making it even more challenging to braise.

這塊肉一咬開不誇張,真的還是跟我第一次來這邊吃的時候一樣軟,而且
肉的水分還保持住,肉色呈漂亮粉紅,一點都不柴。
When I bit into this piece of meat, I'm not exaggerating, it really was just 
as tender as the first time I tried it here. And the moisture of the meat was 
still retained, with a beautiful pink color that wasn't dry or tough at all.

豬腳單點(40元) 吃這豬腳一樣不用動用到你的牙齒,整個就是入口即化。
口味上面我覺得豬腳就比較普通一點,但40元的價格還要有意見就不上道
了呀~
This pig's feet dish is so tender that you don't even need to use your teeth 
to eat it - it just melts in your mouth. While the taste is decent, some people 
may feel that it's not worth the price of NT$40.

對了,這次二訪總算把地圖上的資訊都補足,包括老闆電話、營業時間等
等都已經補遺完成。這邊還有一個消息要告訴大家,老闆跟我說下個月他
房東元只要改建5樓透天,所以在蓋房子期間約一年他會先找附近的地方
暫時營業,房東請他等房子蓋好再搬回來。所以如果大家想到這邊用餐,
這個月還都會在原址,如果有搬到別的地方,我問到地點會再跟大家做補
充,希望大家用餐愉快。喜歡我這間獨家小吃店,也請大家多多幫我轉發

By the way, during my second visit, I finally completed all the information 
on the map, including the boss's phone number and business hours. Also, 
there's some news I want to share with everyone. The boss told me that his 
landlord will be renovating the building to add a 5th floor next month, so he 
will temporarily relocate to a nearby location for about a year during the construction period. The landlord asked him to wait until the building is 
completed before moving back in. So if you want to dine here, it will still be 
at the original location this month. If they move to another location, I will 
ask and provide an update for everyone. I hope you all have a pleasant dining experience. If you like my exclusive snack shop, please help me spread the
