這家「梁嫂炒麵」之前冰箱完全一無所知,直到之前在地方社團分享幾年累積下來吃過的資料,整理好的台中炒麵大攻略,然後被熱心的網友說:「沒有收錄梁嫂真是不專業」。
有此等級的炒麵冰箱沒吃過,著實汗顏!這天因為剛好到附近辦事情,於是循線來到位於中平路上,靠近冰箱媽之前上班的大鵬國小旁,探訪這間傳說中不收錄就不專業的炒麵店。

I had absolutely no idea about this "Liang Sao Fried Noodles" until I shared my accumulated "Taichung Fried Noodle Guide" in a local community group. Passionate netizens told me that not including Liang Sao makes the guide "unprofessional."
I was quite ashamed that I hadn't tried a fried noodle shop of such a supposedly high caliber! So, since I happened to be running errands nearby, I followed the clues to Zhongping Road, next to Dapeng Elementary School where my mom used to work, to visit this legendary fried noodle shop that you "must include to be professional."
1. 大鵬國小旁的日常風景
店址就位於大鵬路跟中平路交叉口,非常好找,附近也好停車。其實這就是一間很平常的炒麵專賣店,在我們台中街頭到處可見。話雖如此,在餐點上桌之前,難免還是多少對他有所期待。
店裡主要就是供應炒麵跟肉燥飯,另外就是這類型店家常出現的大鍋湯,幾乎平常喝得到的湯品都有供應。不過現場看好像沒有提供乾料的服務?但在這種店,應該口頭問一下,出菜應該都不是問題。
桌上調味料準備得算是齊全,除了蒜蓉、甜辣醬、胡椒跟醬油膏之外,還有看起來很辣的辣椒。
這個辣椒看起來感覺還滿厲害~
2. 老饕點評:濕潤卻偏硬的炒麵
因為純粹想試試這個「沒收錄叫做不專業」的炒麵,所以這天只簡單點了一個小炒麵跟一碗大腸頭湯。
這個炒麵據網友分享是說:「可以從頭到尾吃到濕潤的感覺」。這也許是口感的問題吧?不是既然要濕潤,為何不乾脆吃汆燙後淋上肉燥的乾麵,不是百分之百濕潤?
實際吃了這個麵發現,所謂濕潤口感真的是有,但是麵心呈現的熟度是偏硬,坦白說跟一般夜市吃得到的炒麵口感差不多,並沒有讓冰箱覺得特別驚豔之處。不過可能給我建議的人,吃過的店不像冰箱有一、二十家以上的經驗,純粹論口味,梁嫂還算不錯吃啦。但是如果真的要用舌頭嚐後比較,梁嫂的炒麵確實是一般般。

Small Fried Noodles (25 NTD): According to netizens, the appeal of these fried noodles is that "you can enjoy a moist texture from start to finish." But if you just want a moist texture, why not just eat dry noodles blanched and topped with minced meat sauce? That's 100% moist!
When I actually tried it, the so-called moist texture was indeed there, but the core of the noodles was a bit hard. Frankly, the texture was similar to the fried noodles you'd find at a typical night market, and nothing particularly amazed me.
Perhaps the person who recommended this to me hasn't tried over a dozen different shops like I have. Judging purely by taste, Liang Sao is decent. But if we're really comparing with a critical palate, their fried noodles are just average.
3. 老饕點評:大腸頭湯的真實滋味
一般這類店很少會把大腸頭湯獨立出來成為一種湯品販售,大部分都是概括在大腸湯裡,然後客人有特殊指定再跟店家囑咐。以冰箱吃過的經驗,有同樣做法的只有大智路的姊弟系列,像姊娣麵攤跟大麵王這系列就有提供這樣的餐點。
大腸料是貨真價實的大腸頭,口感熟度都還不錯。湯裡還有放豬血,吃起來也是新鮮彈牙無腥味。
湯頭走的路線跟「大麵王」類似,看起來色澤就屬於比較濃郁型的。不過實際喝了之後發現,味覺的反應沒有視覺來得豐富。一樣的湯頭,我覺得大麵王比較有層次。

Pork Intestine Head Soup (35 NTD): It's rare for this kind of shop to list "intestine head soup" as a separate item; usually, it's just grouped under "intestine soup," and customers have to make a special request. The ingredients are genuinely the intestine head, and the texture and doneness are quite good. The soup also includes pig's blood, which is fresh, bouncy, and lacks any gamey odor.
The style of the broth is similar to "Da Mian Wang" (Big Noodle King), looking quite rich in color. However, after actually tasting it, I found the flavor profile wasn't as rich as its appearance suggested. Comparing the two, I think Da Mian Wang's broth has more depth.

基本上梁嫂還是一個吃粗飽的好地方,但如果非吃不可,冰箱個人認為台中地區還有很多同質的店更值得大家專程去吃~很多人是覺得他很便宜,但是冰箱要告訴大家,25 元一碗小炒麵,其實只是行情價喔!🤣
