台中美食探索不間斷!這次要帶大家來到東區和平街,尋找一家沒有招牌,卻讓人念念不忘的早餐美味——「和平街無名炒麵」。這家超人氣炒麵店,以古早味炒麵和料多味美的豬雜湯,開啟了無數台中人的一天。

Today, we venture into Heping Street in the East District to uncover a hidden breakfast gem with no signboard, yet unforgettable flavors - the "Nameless Fried Noodles on Heping Street." This incredibly popular fried noodle shop has been the breakfast choice of countless Taichung locals, offering old-fashioned fried noodles and flavorful pork offal soup to kickstart the day.
1. 沒有招牌的在地人氣店
這家炒麵店沒有醒目的招牌,也沒有華麗的裝潢,甚至連名字都沒有。老闆為了遮陽,還在雨棚下面吊了幾塊帆布,你們覺得這個樣子有像在營業嗎?建議大家要找這家店,請認隔壁「台灣齒輪製造機」的扛棒!
價目表到現在還是手寫在紅紙上貼牆,老闆字還挺工整的唷!店裡賣的品項主要是豬雜湯,主食只有炒麵跟乾冬粉。豬雜現場有的每個部位都可以做成湯,如果跟我一樣懶得選,就點綜合湯。不過他們家綜合湯沒有全部的料都進去,還是老闆隨機放?我也不知道~用餐區座位不多,用餐尖峰時間可能內用要等一下。

This fried noodle shop doesn't have a flashy signboard, fancy decorations, or even a name. The owner even hung a few canvas sheets under the awning for shade. Do you think it looks like they're open for business? If you're looking for this place, I suggest looking for the sign of "Taiwan Gear Manufacturing Machine" next door.
The menu is still handwritten on red paper and stuck to the wall. The owner has neat handwriting! The main item sold here is pork offal soup, and the only main dishes are fried noodles and dry mung bean noodles. You can order soup made with any of the pork offal cuts available, and if you're like me and don't want to choose, you can just order the combination soup. Although, I'm not sure if their combination soup includes all the ingredients or if the owner just puts in whatever they feel like.
Seating in the dining area is limited, so you might have to wait a bit during peak hours.
2. 老台中的靈魂:炒麵與辣醬
之前跟大家說過,東泉雖然是台中名產,不過鐵路以東很多店家都不採用東泉,像這家店用的就是「裕芳」。想吃再辣一點的話,就加點辣椒醬。

I've mentioned before that although Dongquan chili sauce is a Taichung specialty, many shops east of the railway don't use it. This shop, for example, uses Yufang chili sauce. If you want it spicier, add some extra chili sauce.
3. 日月精華濃縮:綜合豬雜湯
店裡美味的關鍵,就是這一大鍋滾著的豬雜
綜合湯 (小碗 40元)
- 豬血:豬雜湯怎能少了新鮮的豬血呢?豬血的口感滑嫩、充滿彈性,新鮮度滿百沒有任何豬味。
- 豬脆管:其實就是豬的主動脈!它是豬心臟連接全身血管的主要管道。脆管的口感非常爽脆,帶有彈性,有點像軟骨或花枝的口感,但更細緻一些。新鮮的豬脆管沒有明顯的腥味,處理乾淨後吃起來很清爽。
- 豬小肚:有個很好聽的名字,其實這個部位是豬的膀胱。豬膀胱的口感是滑嫩、脆彈、有嚼勁的,而且沒有明顯的腥味。
- 豬小腸:口感是滑嫩中帶有嚼勁,油脂和韌性取得一個平衡,處理得好,吃起來會很涮嘴。不過比較起來,我比較喜歡吃大腸,但這碗綜合湯沒有大腸。
最後這個湯頭可以說是日月精華的濃縮,大量酸菜打底熬湯,所有豬雜大鍋煮,這就是最道地我們台中人早餐的味道!

The key to the deliciousness of this place is this big pot of simmering pork offal. And how can pork offal soup be complete without fresh pig's blood? The pig's blood has a smooth and bouncy texture, and it's incredibly fresh without any hint of porky odor.
And this, my friends, is not cartilage, but the pig's aorta (脆管)! It's the main pipeline connecting the heart to the rest of the body's blood vessels. The texture is incredibly crunchy and slightly chewy, similar to cartilage or squid, but with a more delicate touch. Fresh pig aorta doesn't have a strong odor, and when properly cleaned, it's quite refreshing to eat.
Pig's bladder (小肚), which has another name, offers a smooth, crunchy, and chewy texture with no strong odor. The pig's small intestine offers a texture that's smooth yet chewy, with a nice balance of fat and resilience.
And lastly, this soup is the essence of the sun and moon! It's based on a large amount of pickled mustard greens and simmered with a variety of pork offal, creating the most authentic taste of breakfast for us Taichung locals.
