當提到岡山這個名字,許多老饕的第一反應不是風景名勝,而是那甕紅褐色
的名產辣豆瓣醬還有羊肉。這款經由時間淬鍊而成的醬料,其深沉的豆香、
溫潤的辣度與發酵後的鹹醇,早已超越了單純佐餐的角色,它以一種近乎
霸道的溫柔,滲透進了在地的飲食脈絡。

When the name Gangshan is mentioned, the first reaction of many food connoisseurs is not scenic spots, but the iconic reddish-brown specialty: the spicy bean paste, and also mutton. This sauce, refined by time, with its deep bean aroma, mild spiciness, and fermented savory-sweetness, has long transcended the role of a simple condiment. It permeates the local culinary fabric with an almost assertively gentle touch.

對於岡山牛肉麵而言,辣豆瓣醬絕非可有可無的配角,它是不可或缺的風味
塑造者,是湯頭從「家常」躍升至「經典」的關鍵一筆。它的加入,不僅為
湯底奠定了醇厚、回甘的複雜基調,更成為了區隔其他地區牛肉麵風味的
地域性徽章,確立了岡山牛肉麵特有的濃郁與深度。

For Gangshan Beef Noodles, the spicy bean paste is by no means an optional supporting role; it is an indispensable flavor shaper, the crucial stroke that elevates the soup from "homestyle" to "classic." Its addition not only lays a rich, complex, and lingeringly sweet foundation for the broth but also becomes a regional emblem that differentiates its flavor from beef noodles in other areas, establishing the unique richness and depth characteristic of Gangshan Beef Noodles.

前鋒牛肉麵

走訪高雄回台中路上開車經過岡山,決定隨便找一家牛肉麵吃吃看,最後
跟著導航萊到市區前峰路上的這家前峰牛肉麵。位於一處街角轉彎處,這家
牛肉麵店以簡樸的鐵皮屋外觀佇立,外牆因歲月而顯得斑駁。店面沒有醒目
的招牌,僅在牆面上以紅色字體繪製一個大大的麵字加圈,與周遭密佈的電
線桿、交通號誌和街景融為一體,使得這份傳統的風味很容易被匆匆路過的
人車錯過。整體氛圍透露著一股在地老店特有的低調與樸實。

Driving through Gangshan on the way back to Taichung from Kaohsiung, I decided to randomly find a beef noodle shop to try. Eventually, following the navigation, I arrived at this establishment, Qianfeng Beef Noodles, on Qianfeng Road in the city center. Situated on a street corner, the beef noodle shop stands with a simple corrugated metal exterior, its walls showing signs of weathering from age. The shop front lacks an eye-catching sign; only a large circled Chinese character for "noodle"  is painted in red on the wall. It blends in with the surrounding dense utility poles, traffic signals, and streetscape, making this traditional flavor easily missed by passersby. The overall atmosphere exudes the characteristic low-key and unpretentious vibe of a long-standing local eatery.

從店面正面望去,入口處較為開放,左右兩側的玻璃門上同樣有著圓形的
大紅色麵字加圈圖案,不過依然沒有明顯店名,整體設計仍顯低調。店內
燈光明亮,門口兩位穿藍色上衣的就是老闆,不過他們不會跟你歡迎光臨,
我到點餐時才發現原來是老闆,哈哈!

Looking at the shop from the front, the entrance is quite open, with the same large, circled, red "noodle" character design on the glass doors to the left and right. However, there is still no distinct shop name, and the overall design remains low-key. The interior lighting is bright. The two people wearing blue tops at the entrance are the owners, but they won't greet you with a "welcome." I only realized they were the owners when I went to order, haha!

要吃滷味自己夾到盤裡,老闆幫你切好會順便計價。不過跟很多店不一樣
的是上桌的時候,老闆不會跟你說滷味多少錢。價格要結帳的時候才知道,
雖然是很驚嚇的價錢,但放心絕對不是黑店滷味那種驚嚇!

To get braised dishes (luwei), you pick what you want onto a plate yourself, and the owner will slice it up for you and calculate the price. However, unlike many other shops, the owner won't tell you the price of the luwei when they bring it to your table. You only find out the cost when you pay the bill. While the price might be surprising, don't worry, it's definitely not the kind of shocking price you'd find at an infamous rip-off luwei shop!

走進店內映入眼簾的是一個極為簡約的用餐空間。地板是未經修飾的水泥地,
牆面保持白色,沒有多餘的裝潢。店內擺放著幾張常見的白色折疊餐桌,
搭配著一排排鮮豔的紅色塑膠凳,這是台灣小吃店的經典配置,充滿了尋常
巷口麵店的親切感。

Stepping inside, one is met with an extremely simple dining space. The floor is an unfinished concrete slab, and the walls are kept white with no extra decoration. The shop is furnished with a few common white folding dining tables paired with rows of bright red plastic stools—a classic configuration for a Taiwanese snack shop, exuding the familiarity of an ordinary neighborhood noodle joint.

The price list is on the wall, and ordering is done by filling out a slip, featuring all the basic items commonly found in "Waisheng" (Mainland Chinese origin) style noodle shops.

The shop's homemade chili oil is the flavor to rely on if you want some heat.

這就是店家的秘密武器辣豆瓣醬,說實話還沒吃光聞就很香,然後用完
記得要把蓋子蓋上,不然老闆會過來提醒你喔~

This is the shop's secret weapon: the spicy bean paste. Honestly, it smells wonderful even before you eat it. And remember to put the lid back on after using it, or the owner will come over to remind you!

雖然說真的沒有很餓,但既然來了只點碗麵太單調,所以滷味也隨便切切
一下竟然這麼大一盤。

Although I wasn't really hungry, since I was here, just ordering a bowl of noodles felt too plain, so I casually ordered some braised dishes (luwei), and it turned out to be such a large plate.

前鋒牛肉麵

這盤裡面有海帶、豆干跟豬耳朵,說實話滷菜的風味真的讓人沒有什麼
記憶點,不過價格絕對讓你難忘。因為結帳的時候這一大盤才30元,你沒
看錯就是30元,真的有夠誇張!在台中光豬耳朵這量就30元以上了吧!

This plate contains seaweed, dried tofu, and pig's ear. Honestly, the flavor of the braised dishes is quite unremarkable, but the price is absolutely unforgettable. Because at checkout, this large plate was only $30 NTD. You heard that right, just $30 NTD—it's truly unbelievable! In Taichung, this amount of pig's ear alone would cost over $30 NTD, wouldn't it!

前鋒牛肉麵

牛肉麵(130元/小碗、150元/大碗)在店裡面除了湯麵也有乾麵兩種吃法。
不過礙於食量有限,其實我本人也很好奇,他們家的牛肉乾麵長什麼樣子?

Beef Noodles (NT$130 for a small bowl, NT$150 for a large bowl) come in two preparations at the shop: soup noodles and dry noodles. However, due to limited capacity, I am personally also quite curious what their dry beef noodles look like.

前鋒牛肉麵

牛肉採用的是大腱,每碗有三塊而且挺厚挺大塊的。這個肉量差不多等於
別人5-6塊左右。

The beef used is the large shank, with three thick and sizable pieces in each bowl. This quantity of meat is roughly equivalent to five or six pieces in other shops.

前鋒牛肉麵

雖然厚不過肉燒得挺不錯,整體而言算是軟的。這三塊肉吃完其實也會感覺
有那麼一點飽飽,畢竟真的不小塊。

Although the pieces are thick, the beef is braised quite well, and overall it is tender. After finishing these three pieces of meat, you actually feel a little full, as they truly are not small.

前鋒牛肉麵

麵條用的是一般的機器扁麵,比較像陽春麵的口感,建議不要泡在湯裡
太久會糊掉。

The noodles used are common machine-made flat noodles, which have a texture similar to plain Yangchun noodles. It is advised not to leave them soaking in the soup for too long, as they will turn mushy.

湯色看起來雖然很深,其實喝起來的味道沒有想像中的重口味,還覺得反而
有點偏甜沒啥層次感。

Although the soup looks very dark, the taste is actually not as heavy as imagined. I even find it a bit too sweet and lacking in layers.

不過這一切,等你把桌上的辣豆瓣醬加到湯裡之後,岡山辣豆瓣醬的魔法
就開始作用了。那股醇厚的豆香與發酵的鹹香,如同點睛之筆,瞬間穿透了
紅燒湯頭的表層,為湯底注入了厚重且富含底蘊的靈魂。此刻,這碗麵才
真正完成了從一碗普通的牛肉麵到「岡山牛肉麵」的昇華。這份樸實卻濃烈
的風味,不僅滿足了口腹之慾,更成為了代表在地文化與記憶的味覺標籤,
讓每一位饕客都能藉由這份辣豆瓣醬的魔力,將岡山特有的美食印象深深
烙印在心中。至於這家店我個人推嗎?岡山可以當用餐參考,不必專程前往!

However, everything changes once you add the spicy bean paste from the table to the soup; the magic of Gangshan Spicy Bean Paste begins to work. That rich aroma of soybeans and the savory, fermented scent, like the finishing touch, instantly penetrates the surface of the braised beef soup base, injecting a deep and profound soul into the broth. At this moment, this bowl of noodles truly completes its sublimation from an ordinary bowl of beef noodles to "Gangshan Beef Noodles." This simple yet intense flavor not only satisfies the palate but also becomes a gastronomic marker representing local culture and memory, allowing every diner, through the magic of this spicy bean paste, to deeply engrave the unique culinary impression of Gangshan in their hearts. As for whether I personally recommend this specific shop? You can consider Gangshan as a dining option, but there's no need to make a special trip!
