說起這家臭霸王臭豆腐,其實冰箱很多年以前就有聽說過,也一直想來嚐鮮看看。日前跟朋友聊到清蒸臭豆腐,被推薦說臭霸王的清蒸一定要來嚐一下,不然不專業。既然如此,那只好擇日帶著一家大小,約廖士文先生帶路,讓哥嚐嚐鮮囉!
Speaking of this "Chou Ba Wang Stinky Tofu," I actually heard about it many years ago and always wanted to give it a try. Recently, while chatting with a friend about steamed stinky tofu, I was highly recommended to try Chou Ba Wang's steamed version, otherwise, I wouldn't be considered a professional foodie. Since that's the case, I had to pick a day, bring my family, and ask Mr. Liao Shi-wen to lead the way so I could taste it for myself!
這家店只開晚上,店址就位於旱溪大排旁邊,與新天地東區店,隔著大排對望。
營業時間每天只開 4.5 小時,週日跟過年以及三大節日加中元普渡。點餐以口頭方式,不需要劃單,點餐完畢請先付款。
This shop is only open at night, located right next to the Han River drainage channel, facing the Xin-Tian-Di East District branch across the water.
The weather has been scorchingly hot lately, and since it's by a large ditch, there are quite a few mosquitoes here in the summer. I highly recommend spraying some mosquito repellent to be safe. The outdoor seating has no air conditioning or fans, so it's a good idea to bring a towel to wipe your sweat if you sit outside.
They are only open for 4.5 hours a day, and are closed on Sundays, Lunar New Year, the three major traditional festivals, and the Ghost Festival. You order verbally—no need to fill out a form—and you pay upfront after ordering.
店裡的臭豆腐都是老闆親手,利用天然古法泡製。當晚我們就親眼看到豆腐店將新鮮的板豆腐送到店裡,然後老闆跟工作人員有空檔,就輪流過來將豆腐切片、切塊。
清蒸臭豆腐 (50元):很多人推薦冰箱說這家店的清蒸臭豆腐,是全台中最好吃的,叫我來了一定要點。說真的, 這種招牌類的東西是一定會點來吃,不過說是台中難波萬,個人就覺得有點浮誇了。
自製臭豆腐的風味以及軟嫩的口感,在這一道料理裡投表現是無庸置疑的,這裡要贏過他的臭豆腐店真的要好好找一下,實在沒幾間。不過在調味上面,店家用的是台式的五香肉燥。雖然也是很美味,但對於吃慣上海式蒸法的我來說,台式肉燥這元素就過於甜膩了。
The stinky tofu here is handmade by the boss using traditional natural fermentation methods. That night, we saw the tofu supplier deliver fresh firm tofu to the shop, and whenever the boss and staff had a free moment, they would take turns slicing and dicing the tofu.
Steamed Stinky Tofu (50 NTD): Many people recommended this place to me, claiming it has the best steamed stinky tofu in Taichung and that it's a must-order. Honestly, I definitely have to try a signature dish like this, but calling it number one in Taichung feels a bit exaggerated to me.
The flavor and tender texture of their homemade stinky tofu are undeniably excellent in this dish. It would be hard to find many stinky tofu shops that can beat this quality. However, for the seasoning, the shop uses a Taiwanese-style five-spice minced pork. While it's delicious, for someone like me who is used to the Shanghai-style steaming method, the Taiwanese minced pork element makes it a bit too sweet and rich.
白玉滷香肉飯 (70元):所謂的白玉滷香肉飯,其實就是「臭豆腐爌肉飯」是也。真的沒有錯,你的眼睛沒有業障,這個爌肉真的不是假的。爌肉的口感是 Q 的,吃起來的感覺就像媽媽平常在家裡會做的那種家常滷肉,有媽媽的味道啦。整碗飯的份量其實也還不少,基本上以我個人來說,一碗這個加一份清蒸臭豆腐,應該會飽到天靈蓋了吧!?
涼麵 (40元):沒有錯,這邊也有賣涼麵,而且應該是除了酸梅湯跟茶之外,唯一一種跟臭豆腐沾不上邊的商品。醬汁是傳統用手工,一包一包裝好,然後用橡皮筋束袋口。我記得小時候第一次吃學校福利社賣的涼麵,包裝就是像這樣的袋中袋。不過把醬汁淋上之前,記得先把醬料袋搖一搖喔。炎炎夏日,來上一分清爽的涼麵真的最適合不過了。
White Jade Braised Pork Rice (70 NTD): The so-called White Jade Braised Pork Rice is actually "Stinky Tofu Braised Pork Rice." You are not seeing things; this braised pork is the real deal. The texture of the pork is chewy, and it tastes just like the homemade braised pork your mom would make at home—it has that mother's touch. The portion of the rice is quite generous. For me personally, one bowl of this plus a serving of steamed stinky tofu is enough to fill me up to the brim!
Cold Noodles (40 NTD): Yes, they also sell cold noodles here, and it's probably the only item besides sour plum juice and tea that has nothing to do with stinky tofu. The sauce is traditionally hand-packed in small bags and tied with rubber bands. I remember the first time I ate cold noodles from the school cafeteria as a kid, it was packaged in a "bag-within-a-bag" just like this. Before pouring the sauce, remember to shake the sauce bag first. In the hot summer, a refreshing plate of cold noodles is simply perfect.
店裡還有免費的柴魚湯可以喝,愛喝多少請隨意!如果覺得柴魚湯不夠給力,店裡還有顛覆傳統的青菜"臭"豆腐湯可以點用。以高麗菜來打底,味道鮮甜。加上臭豆腐本身天然的風味,若您也是逐臭之夫,應該嚐試看看會很開心唷!
目前因為種種考量,現在店裡已經不供應油炸的脆皮臭豆腐。聽廖士文先生說,以前他們家的脆皮臭豆腐還挺厲害的。不過,既然已經成為絕響,那就只有睡覺時,再等神明來託夢開示囉.........
The shop also offers free bonito soup; drink as much as you like! If you feel the bonito soup isn't enough, they also have an unconventional Vegetable "Stinky" Tofu Soup to order. The soup base is made with cabbage, making it sweet and fresh. Combined with the natural flavor of the stinky tofu, if you are a fan of stinky food, you will be very happy to try it!
Currently, due to various considerations, they no longer serve deep-fried crispy stinky tofu. I heard from Mr. Liao that their crispy stinky tofu used to be quite amazing. However, since it is now a thing of the past, we can only wait for a revelation in our dreams...
