說起這家阿三肉圓,冰箱我真的吃到他可以說是一波三折。第一次來是前些日子到彰化朋友開的音響店換音響,結束後想說順便吃個肉圓,結果到了現場,發現店沒有營業,只有一個大大的公告說:老闆腳受傷,暫時歇業兩週!!!
My journey to eat at A-San Ba-Wan was full of twists and turns. The first time I visited, the shop was closed because the owner had injured his leg and was on a two-week break. It was quite a disappointment.
結果內行的都知道,他後來歇業不只兩週,久到我都快忘記要去吃了~直到前兩個禮拜,我一個失散多年的好兄弟約我到彰化吃小吃,他說要吃阿三肉圓,我才知道他們又重新開張囉。說時遲,那時快,擇期不如撞期,就趕快往彰化去囉。
As regulars know, the break actually lasted much longer than two weeks—so long that I almost forgot about it. It wasn't until a long-lost friend invited me to Changhua recently and mentioned A-San that I realized they had reopened. We immediately headed to Changhua to satisfy our cravings.
一到現場發現,眼前所看到的景象跟我第一次完全不同。已經開始營業是肯定的,而且外帶的人龍還排到馬路上去!!大家請注意一點,這天是.....非假日!非假日!非假日!因為很重要,所以要講三遍,反正生意真的超誇張的好!
The scene was entirely different from my first visit. They were definitely open, and the takeout queue stretched all the way to the main road! And mind you, this was a weekday! The business here is incredibly booming.
這是還沒炸脆皮的肉圓,加熱方式不同,他們用大火高溫油炸,就能製造出脆皮的口感。而一般我們吃的肉圓,是用低溫豬油來泡熱,口感是Q不會脆。內用的話請自行找位置坐,翻桌率很高,大家吃了就會走。牆上掛滿各種金牌獎項,兄弟也說彰化的肉圓之王就是阿三肉圓,看來所言不假。
Before being fried, these meatballs look standard. The difference is the high-temperature deep-frying, which creates a signature crispy skin. Standard meatballs are soaked in low-temperature lard for a chewy texture. The turnover rate for dining in is fast. With all the gold medals on the wall, my friend's claim that A-San is the king of meatballs seems absolutely true.
小肉圓(40元) 是基本款,裡面滿滿的赤肉塊與筍丁,肉塊脆口無腥味,皮Q彈帶脆。而大肉圓(80元) 一掰開,裡面料多到滿出來,除了基本款元素,還有香菇、蛋黃、炸鳥蛋,甚至還有干貝與雞肉絲!豐富到誇張,吃完一顆真的會飽到天靈蓋。因為是脆皮,記得要趁熱快吃,才能嚐到最經典的特色口感。
The small Ba-Wan (40 NTD) is the standard version, filled with crispy lean pork and bamboo shoots. The large one (80 NTD) is packed with mushrooms, egg yolk, fried quail eggs, scallops, and shredded chicken! It's so hearty it will keep you full for hours. Remember to eat it while it's hot to enjoy the perfect crispy skin.
龍骨隨(40元) 與豬肚湯(40元) 的做法也很特別,是把食材加雞蛋做成類似「蒸蛋」的口感。湯頭清爽不油膩,骨髓吃起來就像嫩豆腐一樣滑順。雖然膽固醇可能爆表,但實在是很好喝啊!
The Dragon Bone Marrow Soup (40 NTD) and Pork Tripe Soup (40 NTD) are unique as they are prepared in a steamed-egg style. The broth is light, and the marrow is as silky as soft tofu. It's incredibly delicious despite the high cholesterol!
