因為過去飲食文化與外省融合的關係,吃水餃這個原本屬於中國北方人的飲食習慣,在台灣已經變成生活中很常見的主食。如果大家去過日本就知道,日本人可是把餃子當成一道「配菜」在吃呢。
不過礙於過去經濟條件及習慣,在台灣大部分吃到的水餃仍以傳統豬肉餡為主,想吃到「牛肉水餃」就比較不容易了。在我們台中,如果想吃牛肉水餃,除了兩家知名的清真館之外,再來就是今天我要介紹的,位於西區東興路上的「黃牛肉水餃館」。

Due to the blending of culinary cultures with mainland immigrants in the past, eating dumplings—originally a northern Chinese dietary habit—has become a common staple in Taiwan. If you've been to Japan, you'd know that the Japanese treat dumplings as a side dish, unlike us who enjoy them as a main course.
However, due to past economic conditions and eating habits, most dumplings in Taiwan are traditionally made with pork fillings. Finding "beef dumplings" is relatively rare. In Taichung, besides two well-known Halal restaurants, the other go-to place is the "Huang Beef Dumpling Restaurant" on Dongxing Road in the West District, which I am introducing today.

尋覓牛肉水餃:東興路上的老滋味
距離首訪已經過了 5 年多,菜單上的品項還是很豐富,麵點的價格也都相當親民。因為前一晚稍微喝多,起床吃晚餐一直想喝味道濃郁的湯,這家的牛雜湯就很適合,再來個泡菜跟 10 顆水餃,這一餐吃得非常滿意。說真的有機會我還挺想來這吃吃牛肉火鍋,改天再來烙人!

It's been over 5 years since my first visit. The menu remains extensive, and the prices for noodle dishes are still quite affordable. Having drank a bit too much the night before, I was craving a rich, hearty soup for dinner. Their beef offal soup was perfect for the occasion. Paired with some Sichuan kimchi and 10 dumplings, it was an incredibly satisfying meal. Honestly, I’d love to come back and try their beef hot pot with friends someday!
眷村回憶:傳統四川酸鹹泡菜
泡菜 (35元)
這是傳統自然發酵的四川泡菜,口味偏酸鹹,不是那種吃起來甜甜加糖醋泡的台式泡菜。很多人說這種泡菜很難吃,其實只是吃不慣。像我這種從小在眷村混大的小孩,看到這種跟看到寶一樣!目前台中還有供應這款泡菜的,大概就是湖南味牛肉麵了。

Sichuan Cabbage/Kimchi (35 NTD)
This is traditional, naturally fermented Sichuan kimchi. Its flavor profile leans towards sour and salty, quite different from the sweet-and-sour Taiwanese-style kimchi. Many people might find it unappealing simply because they aren't used to it. But for someone like me, who grew up around military dependents' villages, finding this is like striking gold! Currently in Taichung, the only other place serving this style is probably Hunan Flavor Beef Noodle Shop.
厚皮飽滿:手工高麗菜牛肉水餃
手工牛肉水餃 (7元/顆,最少10顆)
說真的每次吃水餃,看到這種厚厚的手工擀皮就開心了!一直認為吃水餃沒有在追求「皮薄餡多」的,就是要這種厚厚的皮、看不到餡,吃起來才有飽足感呀!
每顆餃子都相當飽滿,白白胖胖的模樣讓人快流口水。內餡是牛肉跟高麗菜製作,先前來吃曾覺得牛肉香味不是很足,不過這次再來吃覺得味道剛好,有鮮沒腥,蘸點醬油提味就很好吃。

Handmade Beef Dumplings (7 NTD/piece, min. 10 pieces)
Honestly, whenever I eat dumplings, seeing this kind of thick, hand-rolled skin makes me happy! I've always believed that dumplings shouldn't just be about "thin skin and lots of filling." It's this thick dough that gives you a truly satisfying and filling bite.
Each dumpling is plump and round, making your mouth water just by looking at them. The filling is made of beef and cabbage. While I previously felt the beef aroma was a bit lacking, this time the flavor was spot on—fresh without any gamey smell. A little dip in soy sauce brings out the best taste.
濃郁鮮美:超高CP值清燉牛雜湯
牛雜湯 (小50元)
50 元的牛雜湯雖然不大碗,但是一個人吃其實剛剛好。湯頭應該是老闆煮牛肉的清湯原汁,熬到稍微呈乳白色狀態,口感相當濃郁卻不膩口。
各式牛雜吃到什麼全憑運氣,可能吃到筋、腸、肚、心或肝,端看老闆盛碗時幫你撈到什麼。吃牛雜最怕吃到牛腥味,這家店的牛雜處理得相當乾淨,一點怪味都沒有,而且火候剛好,不過硬也不太軟。花 50 元吃到這一碗真的挺幸福的!

Beef Offal Soup (Small, 50 NTD)
Although the 50 NTD bowl isn't huge, it's the perfect portion for one person. The broth seems to be the original clear soup from boiling the beef, simmered until it takes on a slightly milky white hue. It tastes very rich but not overly greasy.
What kind of offal you get is entirely up to luck—you might find tendon, intestine, tripe, heart, or liver, depending on what the owner scoops up for you. The biggest fear when eating offal is the gamey smell, which usually indicates a lack of freshness or poor cleaning. Here, the offal is cleaned meticulously with no strange odors. It's cooked to perfection—neither too tough nor too soft. Having this for just 50 NTD is pure bliss!
