說起菜尾,相信現在許多年輕人應該聽都沒聽過,更別說吃過了。在冰箱
還是小冰箱的時候,那時台灣喜慶宴客的主流非流水席莫屬。所謂的菜尾
就是以前的人惜福,把宴席上沒吃完的好料打包帶回家。因為帶回家的菜
尾通常都是先冰起來隔天再吃,所以一般的做法就是復熱或是當作基底料
再加上其他新鮮食材重新煮過來吃。但隨著時代變遷,過去我們印象中的
菜尾我想也沒人要包了,想吃現在因為很少不但不太容易,還得花錢囉~
When it comes to "cai wei" (菜尾), I believe many young people nowadays may not
have even heard of it, let alone experienced it. During the time when refrigerators
were still small,the popular banquet style in Taiwan for celebratory occasions was
the set menu, where a fixed number of dishes were served. "Cai wei" refers to the
leftovers or unfinished dishes from the banquet. People used to cherish these leftovers
and bring them home. Since the leftovers were usually refrigerated and consumed the
next day, the common practice was to reheat them or use them as a base for cooking
with other fresh ingredients.
However, with the changes in times, I don't think anyone wants to take home leftovers
like we used to. It is not only uncommon but also requires spending money nowadays
if one wants to eat them.

在台中還能吃到菜尾湯的地方我一共知道有三家,其中除了一家本來開
在我家附近西屯路一段的已經收掉、還有一家是大智路上的黑豬師、最
後就是今天要跟大家介紹的這家。

on Dazhi Road. Finally, the one I'm going to introduce to you today is another
option.
每天晚上到了九點,在漢口路下午是華美黃昏市場入口的巷口,總是排
起了長長的人龍,目的很簡單,就是為了這家膾炙人口的深夜食堂。

在經歷過新冠疫情然後還處於通膨沒完沒了的時代,這家店的價位算起
來相對親民,也難怪每天一開攤就是大排長龍。

這一鍋是魯肉飯上面的澆頭,採用切碎帶肥油的五花肉製作,光排隊站
在旁邊看就覺得又油又香。

這一大鍋爌肉讓人一看到就飢餓程度爆表,說真的這樣大鍋滷出來的爌
肉想不好吃,還真的有點難度。

hunger. Honestly, it's quite challenging to make braised pork this tasty in such a
large pot.
滷味種類琳瑯滿目,點法就是自己拿盤子夾取再給店家切盤算錢。不過
因為店裡是加熱滷味不是我很愛的種類,所以就拍給大家參考參考。

滷味的價格也很便宜,其實不用太多錢就可以切一大盤,喜歡吃加熱滷味
的可以參考參考。

店裡座位其實不多,不過外面排隊的大部分都是來外帶回家吃的,所以要
內用如果不介意跟別人併一下桌,應該都不太需要等位置。

others, you probably won't have to wait long for a seat if you want to dine in.
一個人的晚餐,放棄小菜因為已經吃不完,爌肉飯的飯量真的有夠多~

爌肉飯($50) 剛剛大家看到那一大鍋爌肉,說什麼也是要點一碗來吃。
我點的是小碗的,白飯量已經非常多。淋上滷汁的白飯,不用我說大
家就可以知道有多好扒。如果覺得單調,店家還有準備酸菜跟辣蘿蔔
放在自助區,想吃請酌量取用。
Braised Pork Rice ($50) Just now, everyone saw that big pot of braised pork
and couldn't resist ordering a bowl to eat. I ordered a small bowl, and the amount
of rice was already plentiful. The rice, soaked in the flavorful braising sauce, is
undeniably delicious. If you find it a bit plain, the restaurant also provides pickled
vegetables and spicy radishes in the self-service area. Please help yourself to them
if you'd like.
豬皮彈牙入味、肥肉入口即化、瘦肉不柴無腥味,真是好爌肉一塊。
如果不想吃飯,爌肉也可以單點唷~
Pork skin is elastic, fatty meat melts in your mouth, and lean meat is not dry
or fishy. It's truly a delicious piece of braised Pork. If you don't feel like having
a full meal, you can also order braised Pork as a standalone dish.
菜尾湯Cai Wei Tang($50) 說起正港的菜尾湯,一般都是辦桌上的海鮮
羹打底,然後再視情況加入帶回的菜尾料。我印象很深刻之前媒體有報導,
在高雄就有專門到處收菜尾回來煮成叫雜菜的菜尾湯賣給客人,有時運氣好
還有可能吃到龍蝦。當然這個做法現在已經越來越少,但在過去物資缺乏
的年代真的見怪不怪,吃到還是幸福呢~
When it comes to authentic "Cai Wei Tang" (vegetable remnants soup), it is
typically a base soup made with seafood and is often served at banquet-style meals.
Depending on the circumstances, leftover vegetable ingredients may be added to
the soup. I vividly remember media reports stating that there were specialized
vendors in Kaohsiung who would collect leftover vegetables from various sources
and cook them into a soup called "Za Cai" or vegetable remnants soup, which they
would sell to customers. Sometimes, if lucky, one could even find lobster in it. Of
course, this practice has become increasingly rare nowadays, but during times of
scarcity, it was not unusual. It was a true delight to come across such a soup and enjoy
it back then.
現代版的菜尾湯早就已經不是菜尾,菜尾就當作是菜名吧!跟辦桌上的海鮮
羹一樣以大白菜打底焢湯,然後再加入相關配料。烏龍路邊攤的版本裡面
有魚丸、金針、白菜等等,還可以吃到豬尾巴唷~湯頭跟過去吃到正統菜尾
來比稍微比較沒那麼濃郁,可以把他想成是比較清爽的白菜羹就好啦。
The modern version of "cai wei" soup is no longer made from leftover banquet dishes.
"cai wei" can be treated as part of the dish's name. Similar to seafood soup served at
banquets, it starts with a base of Napa cabbage simmered in a broth, and then other
relevant ingredients are added. The roadside stall version typically includes fish balls,
enoki mushrooms, Napa cabbage, and even pig tails. The broth of this version, compared
to the traditional "cai wei soup " is slightly less rich and can be thought of as a lighter
Napa cabbage soup.
