In truth, the secret to distinguishing their flavors isn't complicated: Original Beef Noodle Soup emphasizes the pure, natural essence extracted from long-simmered beef bones and meat, resulting in a clear broth with a rich, subtly sweet aftertaste. Braised Beef Noodle Soup, on the other hand, leans heavily on aromatic spices, offering a rich, deep-colored broth, often savory, slightly spicy, and layered with complex flavors.

誠大牛肉爐位於台中南屯區的南屯路向心路交叉口這邊,鄰近南屯老街。
這家店是我隨機經過進去用餐,不是什麼慕名前往的性質,卻意外發現這
家用牛肉火鍋湯底做出來的牛肉麵。
Cheng Da Beef Hot Pot is located at the intersection of Nantun Road and Xiangxin Road in Taichung's Nantun District, close to Nantun Old Street. I stumbled upon this shop randomly and decided to dine in – it wasn't a place I sought out specifically. Yet, I unexpectedly discovered that this establishment crafts its beef noodles using a beef hot pot broth as its base.

因為這是一家賣火鍋的店,隔壁每桌都是家人好友歡聚的場合,像我這種
一個人進來吃麵的人好像有點突兀?其實也不會啦,因為現場也有準備雙人
座位。
Because this is primarily a hot pot restaurant, every table next door seemed to be a gathering of family and friends. For someone like me, dining alone and just having noodles, it felt a bit out of place at first, didn't it? But actually, not at all, because there are also two-person tables available on site.

價目表大家參考一下,基本上店裡除了供應牛肉爐之外,還有提供各式
熱炒,當然也包含牛肉麵。因為最近通膨物價飛漲,寫文之前發現最新
店家價目表價格略有調整,單品差異差不多在10~20元左右,請參考
店家Google Maps裡面有最新資訊。
Please refer to the price list; basically, besides serving beef hot pot, the shop also offers various stir-fried dishes, and of course, beef noodles. Due to recent inflation and soaring prices, I found that the latest menu prices have been slightly adjusted before writing this article, with individual item differences of about NT$10-20. Please refer to the latest information available on the shop's Google Maps.

醬料區辣椒、酸菜請自取,酸菜的風味配牛肉麵很OK~
Please help yourself to chili and pickled mustard greens at the sauce station. The flavor of the pickled mustard greens pairs very well with the beef noodles!

因為店裡餐點出的都是標準份量,雖然很多都想嚐嚐但礙於會吃不完,
所以最後只點了一份炒牛雜及一碗牛肉麵,這樣分量其實就很多了。
Since the dishes here all come in standard portions, although I wanted to try many things, I was afraid I couldn't finish them all. So, in the end, I only ordered a stir-fried mixed beef offal and a bowl of beef noodles. Even this amount was actually quite substantial.

薑絲牛雜(180元) 這一道的價格不變,還是原來的180元一份。

牛雜料店家已經事先燙熟煮軟,整體的風味跟客家薑絲大腸類似,酸度夠勁,
下飯下酒都很適合。
The beef offal is pre-blanched and softened by the shop. The overall flavor is similar to Hakka-style ginger shredded pork intestines, with a satisfying kick of sourness. It's perfectly suited for pairing with either rice or alcoholic beverages.

紅燒牛肉麵(160元) 這一碗跟我當初去吃的150元比較,調整了10元來到
160元一碗。雖然店家標示紅燒牛肉麵,但我覺得這碗更像原汁牛肉麵,
因為沒有過多的辛香料元素,只有牛肉跟牛骨熬出的純粹湯頭。
The Braised Beef Noodle Soup is priced at NT160.ThisisaNT10 increase compared to the NT$150 I originally paid. Although the shop labels it as "Braised Beef Noodle Soup," I personally feel this bowl tastes more like the "Original Beef Noodle Soup" . This is because it lacks excessive spicy and aromatic elements, offering instead a pure broth truly simmered from beef and beef bones.

精選了軟嫩帶筋的花腱部位,經過長時間滷製後切片,每一片牛肉都吸飽
了湯汁的精華,口感軟而不爛,肉香四溢。因為滷好後才切片,所以切面
平整,牛肉的賣相絕佳。半筋半肉的口感軟嫩又不失彈牙,算是滷牛腱的
極品水準。
They meticulously select the tender and sinewy flower shank cut, which is then slow-braised for an extended period before being sliced. Each piece of beef is fully infused with the broth's essence, offering a texture that's tender yet not falling apart, with a rich beef aroma permeating throughout. Because it's sliced after braising, the cut surfaces are smooth and even, giving the beef an excellent presentation. The half-tendon, half-meat texture is soft and tender yet delightfully springy, truly reaching the pinnacle of braised beef shank quality.

就如同我們之前在文章中描述的,這種原汁湯頭正是來自於店家精心熬煮的
牛肉爐湯頭。勺子裡的湯色可以清晰看到它的透亮,這就是純粹牛骨與牛肉
精華長時間慢燉而成的證明,沒有多餘的雜質,只有最純粹的鮮甜與醇厚。
它再次印證了這份原汁牛肉麵的獨特風味來源。
Just as we described earlier in the article, this original broth comes directly from the beef hot pot broth meticulously simmered by the shop. The clear luminescence of the broth visible in the spoon is proof of its pure essence, derived from long hours of slow-stewing beef bones and meat. There are no unnecessary impurities, only the purest sweetness and richness. It once again confirms the unique flavor source of this original beef noodle soup.

而牛肉麵的靈魂,除了湯頭與牛肉,當然也少不了那畫龍點睛的麵條!
誠大牛肉麵選用的是常見的細麵,雖然是基本款,但對我這個細麵偏執者
來說,這正是最完美的選擇。
And the soul of beef noodles, besides the broth and beef, certainly wouldn't be complete without those crucial noodles! Cheng Da Beef Noodles uses common thin noodles. While they might be a basic choice, for me, a thin noodle purist, they are absolutely perfect.
