因為去台南體驗遊艇的關係,國道北上回程的週日下午來到雲林系統這
邊卻遇到大塞車。秉持不把珍貴假期浪費在塞車上的原則,於是就找最
近的交流道下去,然後就到了土庫吃鴨肉........
Due to my yacht experience in Tainan, I found myself stuck in heavy traffic on the northbound journey back on a Sunday afternoon near the Yunlin interchange.
Adhering to the principle of not wasting precious vacation time in traffic, I decided
to take the nearest exit and ended up in Tuku, where I enjoyed some duck meat.
雖然是假日,不過這小鎮卻沒有太多外來的遊客,空氣中瀰漫著慢活的
步調,時間來到這邊彷彿也跟著停止。老街上的房屋看起來都頗有歷史,
造訪的老店,在這種氛圍之下也就不需要多做印證,因為他就是環境的
一部分。早上8:00開始營業至晚上7:00,下午不休息,基本上可以涵蓋早、
午、下午茶、晚四餐。
看現場備料"下一個飯點"的鴨子數量,就知道這家的生意一定好到爆炸。
Although it's a holiday, this small town doesn't attract many external visitors.
The air is filled with a leisurely pace, and time seems to come to a standstill here.
The houses on the old street exude a sense of history, and visiting the old shops
in this atmosphere requires no further validation because they are an integral part
of the environment. Open from 8:00 in the morning until 7:00 in the evening
with no afternoon break, these establishments essentially cover breakfast, lunch,
afternoon tea, and dinner.
看現場備料"下一個飯點"的鴨子數量,就知道這家的生意一定好到爆炸。
雖然我們到的時候是下午非飯點,但是老闆切鴨肉的手卻從來沒有停過。
Observing the number of ducks prepared on-site for the "next meal," you can tell
that this place is thriving. Despite our arrival in the afternoon, not during a mealtime,
the owner's hands have never stopped slicing duck meat.
用餐區簡單明亮,包括隔壁一共有兩個用餐區。現場有化妝室可以用,
對於出門旅遊的朋友們來說相當方便。

米血Rice Blood (NT$40) 米血糕是將鴨血跟糯米混合之後蒸熟而成,這東
西笨許多外國人視為暗黑料理。我知道它看起來黑黑的,但是比起印度那
邊流行的食物,這東西根本跟暗黑料理扯不上關係吧?我反而覺得這是一
種又能當正餐又能當零食、小菜、湯品的好食材。
水血Water Blood(NT$40) 這就是我們一般吃麻辣鴨血那個,在這邊叫做
Black pudding is made by mixing duck blood with glutinous rice and steaming it
until cooked. While many foreigners may perceive this dish as dark or unconventional,
it has nothing to do with the so-called "dark cuisine" associated with some other
regions. Despite its dark appearance, it is far from being comparable to the popular
foods in India, for example. Instead, I find it to be a versatile ingredient that can be
enjoyed as a main dish, snack, side dish, or even in soups.
水血Water Blood(NT$40) 這就是我們一般吃麻辣鴨血那個,在這邊叫做
水血,然後作成乾的當小菜吃。因為血液相當容易腐壞,所以鴨血的品
質如果離開了產地,基本上都不太好控制。有的黑心商人,甚至會添加
其他動物的血液或是添加劑來製作,只為了降低成本。不過這一切來到
產地都不用擔心,這鴨血可是又軟又滑,好吃得咧~
This is what we usually eat as spicy duck blood, called "shui xue" here, and it's
made into a dry snack. Because blood is highly perishable, the quality of duck
blood is challenging to control once it leaves the place of production. Some
unscrupulous traders may even add other animal blood or additives to cut costs.
However, when it comes to the place of origin, there's no need to worry. This
duck blood is soft and smooth, and it tastes delicious!

都會包括心、肝、腸、腱這四樣。下水的美味與否取決於新鮮,因為鴨
子的下水體積小,大部分都是簡單汆燙後沾醬食用,所以品質高下立竿
見影。

鵝腸這類食材,大部分都已經先泡過磷酸鹽處理比較好保存,所以口感
雖然脆,味道卻形同嚼蠟。在產地這類食材可是經過洗淨處理後就馬上
使用,所以吃起來的滋味極鮮,絕不是發泡過的版本可以比擬的。
In general, the duck and goose intestines available in the market are often treated
with phosphate for better preservation. While this process makes the texture crispy,
the taste is somewhat waxy. In their places of origin, these ingredients undergo
thorough cleaning and are immediately used, resulting in an exceptionally fresh
flavor that cannot be compared to the rehydrated versions.
當歸鴨麵線Angelica Duck Noodle Soup(NT60元) 最後是這碗必吃的當歸
鴨麵線,本來來這家店大家點的都是鴨腿麵線,可是現場明明一大堆鴨
子,老闆卻說鴨腿賣完了,真的給他好殘念!不過當這碗標準版本的當歸
鴨麵線一上桌,這肉量真的也讓人看了感動。湯頭走比較清爽的當歸湯路
線,這種湯頭比較合一年四季來享用。像有些店家的當歸湯雖然濃郁,冬
天喝起來很過癮,但是到了夏天就比較不太適合囉。至於鴨肉的品質,因
為是產地一點腥味都沒,這種鮮度真的就是最好的調味料。
In the end, the must-try dish was the Angelica Duck Noodle Soup. Initially, everyone
in the group was ordering the duck leg noodle soup, but surprisingly, the owner came
and informed us that the duck legs were sold out—such a disappointment! However,
when the standard version of the Angelica Duck Noodle Soup was served, the generous amount of meat truly moved us. The broth followed a refreshing Angelica root soup
style, making it suitable for enjoyment throughout the four seasons. Unlike some
places with rich Angelica soup that might be satisfying in winter but less suitable for summer, this soup had a lighter touch. As for the quality of the duck meat, there was
no hint of any gaminess, thanks to its freshness. Indeed, freshness is the best seasoning.
紅麵線也是當地產,口感香Q有勁,這樣子全部一共三碗鴨肉麵線加小
菜只要NT$460,真的不要去吃,不然哪天想吃又好遠真的難過別說我
沒有先勸世啊!!XD
