2024春天釜山行的最後一個晚餐,因為有伴所以才有機會走進之前每次
都沒去成的伍班長烤肉用餐。餐廳位於海雲台沙灘大街龜南路的巷子裡
面,Google maps標得到,只可惜在韓國沒辦法做行車及步行導航路線
規劃,只能土法煉鋼開著地圖自己對著箭頭方向走。
For my last dinner in Busan in the spring of 2024, I finally had the chance to dine
at Captain Wu's BBQ, a place I had missed on previous visits, thanks to having a
companion. The restaurant is located in an alley off GUNAM RD. on Haeundae
Beach Street, and can be found on Google Maps. Unfortunately, in South Korea,
it's not possible to use driving or walking navigation, so I had to make do by
manually following the arrow on the map.
1970年開業至今已經堂堂邁入第50個年頭,真的是海雲台當地元老級的
韓牛烤肉招牌名店。獨棟的餐廳建築有別於龜南路上連棟式店面,在這
邊吃燒肉,硬是少了一份壓迫、卻同時也多了輕鬆跟愜意。
Having opened in 1970, Captain Wu's BBQ has proudly entered its 50th year,
truly making it an old-timer among local eateries in Haeundae. Unlike the row
shops on GUNAM RD., this stand-alone restaurant building offers a unique dining
experience. Eating barbecue here, one feels less confined and more at ease
and comfortable.
店裡座位有分為室內區以及室外區,室內區有一、二樓的空間,可惜當
天可能二樓沒開放店員不讓我上去看,所以不清楚上面的狀況。
The restaurant has seating areas both indoors and outdoors. The indoor area spans
the first and second floors. Unfortunately, it seems the second floor was not open the
day I visited, as the staff did not allow me to go upstairs, so I am not sure of the
situation there.
室外區的空間比室內寬敞許多,桌椅排列也比較鬆散,而圖中右邊的帆
布帳里也有座位。基本上,這家店的座位其實還挺多的,客滿的時候現
場應該人山人海不意外。
備餐區採半開放式的設計,部分廚房作業相當透明呈現。
The outdoor area is much more spacious than the indoor space, with tables and
chairs arranged more loosely. Additionally, there are seats under the canvas tents
shown on the right side of the picture. Essentially, this restaurant actually has quite
a few seats available, so it's not surprising that it gets extremely crowded when full.

The prep area features a semi-open design, making some of the kitchen operations
quite transparent.
韓國一般餐廳的價目表,都會標示在店裡明顯之處,基本上都會是全韓
文。不過其實也不用擔心看不懂,位於觀光勝地,店家其實都會另外準
備不同語言版本的菜單讓客人參考。
In general, the menu prices in Korean restaurants are displayed prominently within
the establishment and are typically in Korean only. However, there is no need to
worry about language barriers, especially in tourist areas. Many restaurants prepare
menus in multiple languages to accommodate international guests.
店裡只有供應牛跟豬兩款肉品,其中牛僅一部位,豬肉的部分選擇性
較多元合計有四種不同部位以及一款調味肝連肉。至於什麼是肝連肉?
就是我們知道的橫隔膜,台灣中南部也較做隔間肉。
除了肉品之外,店裡還有供應一些湯品麵點,品項不多,不太容易產生
The restaurant only serves two types of meat: beef and pork. For beef, only
one specific cut is offered, while the pork is available in a more diverse selection,
including four different cuts and one flavored option known as liver attached meat.
"Liver attached meat" refers to what we know as the diaphragm, which is also
called "partition meat" in central and southern Taiwan.
除了肉品之外,店裡還有供應一些湯品麵點,品項不多,不太容易產生
選擇障礙。
In addition to meat dishes, the restaurant also offers a selection of soups and
noodles.The menu is not extensive, making it less likely for customers to experience
decision fatigue.
在韓國吃飯,按照慣例滿桌的小菜當然是標配。辣拌黃豆芽、蔥絲、自製
泡菜、辣大頭菜泡菜、蒜瓣及很辣的青陽辣椒,當然還有包肉的生菜跟
韓國芝麻葉。
In Korea, it's customary to have a table full of side dishes as a standard part of
the meal.Spicy bean sprouts, sliced green onions, homemade kimchi, spicy radish
kimchi, garlic cloves, and very spicy Cheongyang chili peppers are included, along
with fresh lettuce and Korean perilla leaves for wrapping the meat.

一盤的肉量都是點兩份放一起。
The restaurant only sells one type of beef, which is the boneless Korean beef rib
meat, known to us Taiwanese as boneless short ribs. Since each serving is only
120 grams, we typically order two servings per plate to have enough.
在燒烤韓牛去骨排骨肉的過程中,肉質會經歷顯著的變化,這些變化
關鍵地影響最終的口感和風味。初期,韓牛肉的溫度逐漸升高,肉中的
脂肪開始融化,這使得肉質變得更加柔軟和多汁。隨著烤制的持續,
肉表面的蛋白質會發生美拉德反應(Maillard reaction),形成一層金黃
色且帶有豐富香氣的表皮。
During the grilling process of boneless Korean beef ribs, the meat undergoes
significant changes that crucially affect the final texture and flavor. Initially, as the
temperature of the beef gradually increases, the fats within the meat start to melt,
making the meat softer and juicier. As grilling continues, the proteins on the surface
of the meat undergo the Maillard reaction, forming a golden-brown crust that is
rich in aroma.
此時,肉內部的水分會逐步蒸發,而脂肪的滲出則為肉質增添了濃郁的
風味。繼續燒烤,肉質的纖維會持續緊縮,在最適當的時刻即可夾起食
用。因為店裡的爐火夠焰,能保證韓牛肉在快速短時間燒烤後的最佳口
感。外酥內嫩,脂香四溢。
At this point, the moisture inside the meat gradually evaporates, while the release
of fat enriches the flavor of the meat. As grilling continues, the fibers of the meat
continue to tighten until it is the perfect moment to be picked up and eaten.
Thanks to the restaurant's high flames, the Korean beef is guaranteed to have the
best taste after being quickly grilled for a short period of time. The result is a crusty
exterior with a tender inside, and a rich, fatty aroma.

這道菜以精選的韓牛肉為原料,經過精心醃漬以提升其風味和口感。

The Seasoned Rib Meat (₩15,000/120g) at Captain Wu's is extremely popular
locally. This dish is made with carefully selected Korean beef, which is marinated
to enhance its flavor and texture. Korean beef is renowned for its high-quality
meat and rich marbling. The marination process further accentuates the meat's
deliciousness and depth of flavor.
在伍班長的醃漬手法處理下,這些牛肉在烤製時外皮微焦,內裡保持多
汁,味道豐富而不失其原始的鮮甜,讓每一口都成為享受。這不僅是一
道美味的料理,更是一種文化的體現,讓食客能夠在品嘗中感受到韓國
烤肉的傳統與創新。
Under Captain Wu's marinating techniques, the beef is grilled to a slight char on
the exterior while remaining juicy inside. The flavor is rich without losing the meat's
original fresh sweetness, making each bite a delight. This dish is not just a delicious
meal; it also embodies a cultural expression, allowing diners to experience the
tradition and innovation of Korean barbecue.
最後別忘了剛剛一開爐,店家就幫忙放進烤盤的烤蛋。雖然整餐吃下來
有點幾乎忘了它的存在,但是這爐邊慢火烤出來的蛋,真的是超美味呀~
Don't forget about the grilled eggs that the restaurant staff helpfully placed on the
grill at the beginning. Although it's easy to overlook them during the meal, these
slow-cooked eggs by the fireside are truly delicious!
總的來說,對於沒有去過海雲台的朋友們,這家我真的超級推薦的。
推薦的理由除了這家店的歷史掛保證之外,其實很多在地韓國人也會三
五成群來這邊吃肉喝酒,那就證明這家店不只是做觀光客生意,連本地
人都捧場才能屹立不搖。最重點是,他們家的韓牛雖然只有一個部位,
但是收費比起附近其他店家100g韓牛動輒3萬韓元起跳,真的等於只有
半價的消費就能品嘗到好吃的韓牛唷~
Overall, for those who have never visited Haeundae, I highly recommend this restaurant.
My recommendation is not only because of the restaurant's historical reputation but
also because many local Koreans come here in groups to enjoy meat and drinks.
This proves that the restaurant is not just catering to tourists; it has the support of
the locals, which has helped it to stand firm over the years. Most importantly, although
they only offer one cut of Korean beef, their prices are much more reasonable
compared to nearby restaurants where 100g of Korean beef can start at 30,000 won.
Here, you can enjoy delicious Korean beef at nearly half that price.
