雖然已經進入農曆十月天了,但最近才比較有那麼一點點冬天的感覺。因為全球暖化的因素,專家說這個冬天可能會成為有史以來最熱的一個冬天。
還記得沒幾年前,季節差別還算明顯,冬天一到,最開心的就是各式各樣的鍋類紛紛上場。冷風颼颼的夜晚,三五好友聚在一起喝喝小酒,再來個羊肉爐是那時候感覺最享受的一件事。只是近年來的暖冬,讓這種機會相對的減少很多。

Although it's already the 10th lunar month, it's only recently started to feel a bit like winter. Due to global warming, experts say this might be the hottest winter in history. I remember a few years ago, the seasons were still quite distinct. Once winter arrived, the best part was the variety of hot pots appearing everywhere. On a chilly wind-swept night, gathering with a few friends for some drinks and a mutton hot pot was the ultimate enjoyment. However, the warm winters in recent years have made these opportunities much rarer.

The weekend before I went abroad, the first proper cold wave finally arrived. Back in Tainan, without a second thought, I dragged my whole family to "Xiang Ye" for a hearty feast.
這家鄉野炭燒羊肉爐,在台南當地算滿有名的,之前回台南曾經外帶在家裡吃過,但是冰箱從來沒有到店用餐的經驗。去之前就聽說這家店**加湯是要錢的**,知道這消息之後,其實對這家店充滿了好奇心,畢竟加湯要錢,在我的經驗裡面還沒有遇到過,這天就好好的到現場了解一下!

"Xiang Ye Charcoal Mutton Hot Pot" is quite famous in Tainan. I had tried their takeout at home before, but I've never had the experience of dining in the restaurant. Before going, I heard a rumor that they charge for soup refills. Upon hearing this, I was actually filled with curiosity about this shop. After all, I've never encountered a place that charges for adding soup in my experience! So, I decided to go there and check it out for myself.
坐無虛席的熱鬧氛圍
一到店裡果然坐無虛席,稍等帶位就座之後,沒多久火爐就上場囉。火鍋料採自助式的方式自行前往冰櫃拿取,主鍋我們點了 980 元的大鍋。

As expected, the restaurant was packed when we arrived. After a short wait to be seated, the charcoal stove was brought to our table. The hot pot ingredients are self-service; you just go to the fridge and take what you want. We ordered the large main pot for 980 NTD.
炭火慢燉的極致美味
砂鍋配上炭火,整個感覺跟在家裡用電磁爐加熱完全不同。 炭火屬於慢火,慢慢的熬,可以讓風味釋放得更徹底。帶皮羊肉,份量給得不少,SIZE 在吃過的羊肉爐裡面也算不小。

A clay pot combined with a charcoal fire feels completely different from using an induction cooker at home. Charcoal provides a slow heat, gently simmering to release the flavors more thoroughly. The lamb comes with skin on, the portion is generous, and the size of the meat chunks is quite large compared to other places I've eaten.
雖然是藥膳湯頭,但是味道卻出奇的清爽,接下來一直喝湯就是那天冰箱持續的動作。講到這邊,終於讓我明白為什麼店家敢開出加湯要價 50 元的條件,因為實在是太妙的湯頭。如果任客人無限量的取用,我想店家一定不划算吧?冷冷的天,喝著熱湯,暖呼呼的感覺真的超級讚的!!

Even though it's an herbal broth, the taste is surprisingly light and refreshing. Drinking soup continuously became my main activity that day. Speaking of which, I finally understood why the shop dares to charge 50 NTD for adding soup—the broth is simply too good. If customers could refill it unlimitedly, the shop probably wouldn't make a profit, right? Sipping hot soup on a cold day, that warm fuzzy feeling is absolutely fantastic!!
必點:簡單卻銷魂的麵線
來到這種店,按照慣例,一定也要嚐嚐他們家的麵線。 雖然看起來沒什麼,不過這麵線也真的超香的。雖然只用了簡單的油蔥調味,但是越是簡單越能看出店家的功力跟用心。

Coming to a shop like this, it's customary to try their Mian Xian (vermicelli). Although it doesn't look like much, this vermicelli is incredibly fragrant. Even though it's seasoned simply with shallot oil, the simplicity really shows the chef's skill and dedication.
滿特別的一家羊肉爐,在我們全家心中,說是台南市羊肉爐的 No.1 真的ㄧ點都不誇張唷。有機會到台南,推薦大家到鄉野嚐嚐,保證絕對讓各位感覺不虛此行且回味無窮唷....

This is quite a unique mutton hot pot place. In my family's heart, calling it the No. 1 mutton hot pot in Tainan is no exaggeration at all. If you have a chance to visit Tainan, I highly recommend trying Xiang Ye. I guarantee it will be a worthwhile trip with endless aftertastes...
