半筋半肉真材實料,正所謂麵好、湯濃、肉大塊,在這一碗裡面通通看得到!
This bowl is filled with half meat and half tendon, with real and substantial ingredients. As they say, the noodles are excellent, the soup is rich, and the 
meat is in large chunks, all of which can be clearly seen in this one bowl!

清水牛肉麵

清水的士官長擀麵很有名,但冰箱不說大家可能不知道清水的牛肉麵也
很好吃,至少今天介紹給大家的這間清水牛肉麵,就是真材實料好店的
代表。位於鰲峰路清水分局斜對面這邊其實不太好停車,不過附近有公
有停車場,停好走路大概3分鐘的腳程。
The sergeant's hand-pulled noodles in Qingshui are very famous, but you 
might not know that their beef noodles are also delicious if you haven't 
seen them in the fridge. At least, the Qingshui beef noodle shop I'm 
introducing today is a representative of a truly authentic and tasty restaurant. 
It's located on Ao Feng Road, just across from the Qingshui police station, 
and parking is not easy around here. However, there is a public parking lot 
nearby, and it's only about a 3-minute walk from there.

點餐在入口處,小菜一律放在透明冷藏櫃裡面,想吃什麼直接點用就可
以了。
You can place your order at the entrance and all the side dishes are stored 
in a see-through refrigerated display. Just point to what you want and 
you're good to go!

要吃的主食或麵點如果大家像我一樣自己一人去吃的話,就口頭跟店家點
用即可。如果人比較多,那就劃單,然後點完餐店家會照人數排空桌給大
家,記得不是自己找位置坐。如果等餐空檔臨時要換桌,記得要跟店家說
一下,以免送錯餐喔。
If you're dining alone and ordering a main dish or noodle dish, just tell the 
server your order verbally. However, if you're with a group, make sure to 
use the ordering form provided by the restaurant. Once everyone has placed 
their orders, the restaurant will assign a table based on the number of people 
in your group, so don't seat yourselves. If you need to change tables during 
your meal, be sure to let the server know to avoid any confusion with your 
food order.

飯點時間的用餐區幾乎座無虛席,且翻桌率還不算低,生意好看得到!
The dining area during meal times is almost always packed, and turnover 
rate is not too shabby either. Business is booming and it shows!

一碗牛肉麵+3種小菜這晚我一個人獨享,這三款小菜都是$35一份。
Tonight I'm having a bowl of beef noodle soup and three side dishes all
to myself. Each of the three side dishes costs $35.

清水牛肉麵

涼拌豬脆腸也就是豬生腸(母豬的輸卵管),這一道之前去吃一定必點。因
為是豬內臟下水類,所以要做涼拌菜新鮮度非常要求,否則那一股不新鮮
產生的腥臭味,是怎麼下調料都很難蓋過去的。脆腸爽脆彈牙,酸菜根薑
絲一起提供了豐富的風味跟口感,如果敢吃內臟這道我很推。
I always order the "Liang Ban Zhu Cui Chang" or pig intestine salad when 
I go out to eat. It's made from fresh pig fallopian tubes and needs to be
 really fresh since it's a type of offal. Otherwise, the unpleasant smell can't 
be covered up no matter how much seasoning is added. The crunchy texture 
of the intestines is refreshing, and the combination of sour cabbage and 
ginger provides a rich flavor and mouthfeel. If you're daring enough to try 
offal, I highly recommend this dish.

涼拌鹽水花生調味適中,花生新鮮脆口彈牙,吃牛肉麵配這一味很對味。
The salted water peanuts in cold dressing have just the right amount of 
seasoning, and the peanuts are fresh, crispy, and crunchy. They go perfectly 
with beef noodles.

清水牛肉麵

豬耳朵的表現就讓我非常失望,因為他的口感是軟爛的,我覺得有點噁
心的口感,所以只吃了一兩片後整盤放棄。
The pig ear dish was a major letdown for me. The texture was disgustingly 
soft and mushy, and I couldn't stomach it after just one or two bites. So I 
ended up giving up on the whole plate.

果然是貨真價實的半筋半肉,大塊牛筋滷得入味軟爛入口即化,絕對不是
只有肉裡面有筋叫做半筋半肉。

Wow, this is truly the real deal with lots of meat and tendon. The large 
chunks of beef tendon are perfectly seasoned and cooked until they're 
tender and melt-in-your-mouth delicious. It's definitely not just meat 
with a few bits of tendon - this is what you call half meat, half tendon!

清水牛肉麵

牛肉部分採用澳洲牛腱切成大塊滷製,每一碗有好幾大塊燒得入味、口
軟而不爛的紅燒牛肉,光吃肉跟滷牛筋這碗$160其實真的就值了。
The beef in this dish is made using large pieces of Australian beef shank, 
which are braised until they're tender and flavorful. Each bowl comes with 
several delicious and melt-in-your-mouth chunks of braised beef and beef 
tendon, making it totally worth the $160 even if you just focus on the meat 
and tendon.

清水牛肉麵

麵條採用的雖然不是細麵,但相較於陽春麵的規格確實是比較細,我個人
覺得這個很像是我們海線拉仔麵那種寬度。雖然吃湯麵細麵還是我的首選,
不過這回吃到這樣寬度的麵條也挺好吃,久泡也不會糊掉。
The noodles used are not as thin as regular noodles, but they are still 
relatively thin compared to the standard width of plain noodles. Personally, 
I feel that they are quite similar to the width of our local "La-ah mee". 
Although I prefer thin noodles when eating soup noodles, I still enjoyed 
these noodles, which didn't get mushy even after being soaked for a 
long time.

清水牛肉麵

湯頭的部分看之前的實際我好像嫌他味道不夠濃郁,不過這回再去吃似乎
這問題已經不存在了。湯頭屬於比較重鹹的川味,只是這家店現在的湯頭
雖然香,但整體來說會比較偏油一點。如果冬天寒流來、或店家夏天冷氣
開很強的話,要內用記得吃快一點,不然等湯冷掉上面會凝結一層牛油,
就沒那麼好吃囉~
So, regarding the soup base, in my previous visits, I found it to be lacking 
in richness, but this time around, it seems like that's no longer an issue. 
The soup has a strong saltiness to it, which is typical of Sichuan cuisine, 
but overall it's a bit oily. If you visit during a cold snap in the winter or if 
the air conditioning is cranked up high during the summer, and you're 
dining in, be sure to eat quickly, otherwise the soup will cool down and 
a layer of butter will form on top, making it less delicious.
