台中北平路上牛肉麵新店,湯好肉量多又大塊!!New beef noodle resturant with delicious soup and generous portions of meat in large chunks!(台中小吃 北區404)

情逐漸趨緩,人們慢慢地又回到以前正常生活的狀態。經過這三
年的大洗牌,雖然市面上很多餐廳小吃已經不復存在,不過新開的店家
其實也如雨後春筍一樣冒出來。今天就帶大家到冰箱我最近新發現的牛
肉麵店,地點就在台中北區一級戰區北平路上面這家阿泰師牛肉麵。
As the COVID-19 pandemic gradually subsides, people are slowly returning 
to their normal lives before the outbreak. After three years of upheaval, many restaurants and street vendors may have disappeared from the market, but 
new businesses are also emerging like mushrooms. Today, I will take you to 
a newly discovered beef noodle shop in my fridge, located on Pei Ping Road 
in the highly competitive North District of Taichung. It's called
 "A-Tai Shi Beef Noodles".

阿泰師牛肉麵

這家店我其實常常買菜都會經過,不過因為這邊不好停車,所以一直沒
有機會停下來嚐嚐。這天一樣買完菜要回家準備開店,剛好經過看到斜
對面停車場有空位,那就今天吧!!

I often pass by this store when buying groceries, but I haven't had the 
chance to stop and try it out because parking is difficult in this area.
On this day, I had just finished buying groceries and was heading home 
to prepare for work. I happened to see an available parking spot in the 
parking lot diagonally across the street, so I decided to seize the 
opportunity and try the store out today!

用餐環境有簡單裝潢,牆上有一大片大圖輸出直接跟客人介紹店家。
The dining environment is simply decorated, with a large picture printed
on the wall introducing the restaurant directly to the customers.

Order first and pay after finishing the meal.

店裡供應的小菜不是一般牛肉麵店常見的滷味,比較像是一些小館子會
出現的涼拌菜。我個人吃牛肉麵還是比較喜歡配滷味,所以這次就不跟
老闆捧場了。
The small dishes served in the store are not the typical braised dishes 
commonly found in beef noodle shops, but rather resemble the cold 
dishes that one might find in a small restaurant. Personally, I prefer to 
pair my beef noodle with braised dishes, so I won't be patronizing this 
store this time.

調味料區基本上該有的都沒缺,光辣椒記得沒錯好像有三種以上。酸菜
是讓客人自行取用,這邊的三菜沒有其他多餘的調味,配麵最好的配方。
我真的很不喜歡店家附的酸菜又炒蒜頭又炒辣椒、糖這一類的,這種加
味過頭的酸菜的第一會破壞湯頭的風味,第二那根本就是吃台式刈包在
使用的酸菜咩。
The condiment area is fully stocked, with no shortage of options, including 
at least three different types of chili peppers. The pickled vegetables are 
self-serve, and the three dishes are not accompanied by any additional 
seasonings, making for the perfect noodle pairing. Personally, I dislike 
when restaurants add excessive flavorings to their pickled vegetables, 
such as fried garlic, chili, and sugar. Not only does it ruin the broth's taste, 
but it's also not the type of pickled vegetables typically used in 
Taiwanese-style steamed buns.

紅燒牛腱心麵Braised Beef Tendon Noodles(140 NTD)

因為湯頭是一家牛肉麵店很重要的靈魂,所以先來一口湯。這個湯據店家
資料表示,每天都是採用新鮮牛骨、加上10種辛香料、還有5種蔬果,花
費足8個鐘頭熬製而成。他們家的湯頭喝下去第一口可能感受的的味覺衝
擊沒有那麼強烈,還會有一點覺得過淡。不過,這湯喝到後來卻是越醇
越香,整體而言是相當溫和耐喝的紅燒湯。
As the broth is the soul of a beef noodle restaurant, let's start with a sip 
of the soup. According to the restaurant's information, the soup is made 
by simmering fresh beef bones with 10 kinds of spices and 5 types of 
vegetables and fruits for a full 8 hours each day. The first taste of their 
broth may not be too strong, and some may find it a bit too light. 
However, the flavor will become richer and more fragrant with each sip, 
making it an overall mild and easy-to-drink red braised soup.

這家店的肉量真的不少,我吃小碗的140元,就有這樣4塊厚切的滷牛腱心。
The amount of meat in this shop is really not small. I ordered a small bowl 
for 140 NTD, and there are four thick slices of braised beef tendon in it。

均勻的半筋半肉是牛腱心的特色,也是他比別的部位昂貴的地方。
阿泰師燒牛肉是有真功夫的,不但外型漂亮完整,但口感直逼入口即化
的程度。
The characteristic of beef shank is its evenly distributed half-tendon 
and half-meat, which is also the reason why it is more expensive than 
other cuts.Chef A-Tai's grilled beef has real skills, not only does it look 
beautiful and complete, but the texture is also close to melting in your 
mouth.

牛腱頭這帶整塊筋的部位,真的堪稱逸品,因為一條牛腱只有一塊呀~
牛肉雖軟,但是牛筋的部分卻不會跟著變成太軟爛,反而還有一點口感。
我真的其實很不喜歡吃那種滷得爛爛的牛筋,有點咬勁才香啊!!
Beef tendon, which is a cut of meat consisting of a whole piece of tendon, 
is truly a delicacy because each cow only has one piece of it. Although beef 
is typically soft, the tendon portion remains slightly chewy and adds a 
unique texture to the dish. Personally, I am not a fan of overcooked, mushy 
beef tendon - I believe a bit of chewiness adds to the flavor.

麵條我依舊是選擇細麵,這純屬個人習慣,沒有美味與否的絕對。阿泰師
的麵條吃起來略帶咬勁,這拿來做乾麵應該也是很好吃。
"I still prefer thin noodles when it comes to noodles, this is purely a 
personal habit, there is no absolute deliciousness. The noodles from Ah 
Tai are slightly chewy, which should also be very delicious for making 
dry noodles."

高麗菜水餃
Cabbage dumpling (7 NTD/piece)

水餃一個7元,沒有最低量限制,一個水餃也可以點,但我相信不會有人
真的只點一個水餃吧?這個水餃一看就跟眷村古早味一樣,屬於餃子皮比
較厚,可以吃飽的那種餃子。
One dumpling costs 7 NTD, with no minimum order quantity, although 
I believe that no one would actually order just one dumpling, right? 
This dumpling looks like an old-fashioned, nostalgic style dumpling, with
thicker skin that can make you feel full after eating.

飽滿的內餡,吃得到高麗菜的爽脆同時又帶有肉汁的甜。這次去韭菜水
餃剛好賣完了,下次有機會再來試試~
The filling is plump and juicy, and you can taste the crispiness 
of the 
cabbage along with the sweetness of the meat juice. Unfortunately, 
the chive and pork dumplings were sold out this time, but I'll try them 
next time I come!
