因為被葡萄牙統治多年的關係,來到澳門除了經典粵菜必吃之外,融合
在地文化及食材的澳葡菜也是不容錯過的經典。所謂澳葡菜就是澳門式
的葡萄牙料理,會有這支菜系的出現,完全就是當初葡萄牙人來到澳門
就地取材的濫觴。今天帶大家來到澳門美高梅的盛事餐廳,一起來享用
這個在小里斯本天幕下的精緻澳葡佳餚。
Due to the many years of Portuguese rule, when visiting Macau, in 
addition to classic Cantonese cuisine, it is also essential to try Macanese 
cuisine that incorporates local culture and ingredients. Macanese cuisine, 
also known as Macanese-Portuguese cuisine, is a fusion of Portuguese 
cuisine with a Macau twist. The emergence of this cuisine is due to the 
fact that the Portuguese settlers in Macau had to make do with local 
ingredients. It is a classic cuisine that should not be missed when 
visiting Macau.Today, I will take you to the The ROSSIO restaurant at 
MGM Macau to enjoy the exquisite Portuguese and Macanese cuisine 
under the blue sky of little Lisbon.

真的,有時候在餐廳能看廚房內的廚師烹調過程,其實也是一場精采的
表演。
Adopting an open kitchen design, all cooking processes are presented 
in plain view of customers. To be honest, sometimes being able to see 
the chefs in action in the restaurant kitchen is also an exciting performance.

餐廳內也設有一座大型玻璃帷幕酒窖,各式佐餐好酒任君挑選。

薯蓉青菜湯($60)是一道以馬鈴薯泥和菠菜為主要材料的湯品。將煮熟
馬鈴薯加入青菜和調味料,再經過攪拌或打成泥狀,最後加入適量的湯汁
調勻再淋上幾滴初榨橄欖油。這道湯口感柔軟順滑,而且充滿著薯泥和青
菜的香味,非常適合當做開胃湯或者配菜。
Mashed Potato and Spinach Soup ($60) is a soup made mainly from 
mashed potatoes and spinach. Cooked potatoes are mixed with spinach 
and seasonings, then blended or mashed into a puree. A suitable amount 
of soup is added and stirred to achieve a smooth consistency, then finished 
with a drizzle of extra-virgin olive oil. This soup has a soft and silky texture, 
and is filled with the aroma of mashed potatoes and spinach. It is an ideal 
appetizer or side dish.

白酒煮蜆($140)這是一道葡萄牙傳統菜餚,通常使用新鮮的蜆和葡萄牙
白酒一起烹製而成。將洗淨的蜆和葡萄牙白酒一起放入鍋中煮熟,加入
一些調味料和香草,例如蒜頭、香菜等,再用麵包或薯條蘸取湯汁食用。
這道菜通常作為前菜或下酒菜,口感清爽,風味獨特,深受許多葡萄牙
人和遊客喜愛。
Clams in White Wine ($140) is a traditional Portuguese dish that 
is typically prepared using fresh clams and Portuguese white wine. 
The cleaned clams and white wine are cooked together in a pot, along 
with some seasonings and herbs such as garlic and cilantro, and then 
served with bread or fries for dipping into the broth. This dish is often 
served as an appetizer or snack to accompany drinks, and is loved by 
many Portuguese locals and tourists alike for its refreshing taste and 
unique flavor.

免治和牛飯($180) 免治(Minchi)是一道澳門的傳統菜肴。它是一道以豬
或牛碎肉、切丁馬鈴薯為主要材料,加上醬油調味的菜肴。其他食材也
可以添加進去,例如洋蔥、大蒜和香料。這道菜通常配以飯和一個煎蛋。
免治具有鮮美的味道,略帶甜味,是澳門一道受歡迎的家常美食。今天
的版本是以日本和牛碎肉來入菜,搭配炸過的馬鈴薯丁,風味相當獨特。
Wagyu Beef Mionchi with Rice ($180) is a traditional dish in Macau. It 
is made primarily with minced pork or beef, diced potatoes, and soy sauce seasoning. Other ingredients such as onions, garlic, and spices can also 
be added. The dish is usually served with rice and a fried egg. Minchi has 
a delicious taste with a slightly sweet flavor and is a popular home-cooked 
dish in Macau. Today's version features minced Wagyu Beef , paired with 
fried diced potatoes for a uniquely flavorful experience.

忌康焗鱈魚($180)
是一道美味的燉菜,使用了馬介休入菜。將馬介休加水
泡發還原,然後加入切碎的大蝦肉、蔬菜、奶油等材料拌勻,最後加入乳
酪絲撒在上面,放入烤箱烤至金黃色即可。
Cod Gratin ($180) is a delicious stew dish that uses Bacalhau in the 
recipe.The Bacalhau is soaked in water to rehydrate and then mixed 
with chopped shrimp, vegetables, butter, and other ingredients. 
Finally, cheese is sprinkled on top, and the dish is baked in the oven 
until golden brown.

湯匙一挖只見滿溢的配料,吃進嘴裡感受香濃奶味之餘,又能嘗到濃縮
在海鮮食材裡的海味。
With each spoonful, you can see the overflowing ingredients, and as 
you eat, you can feel the rich and creamy flavor combined with the 
concentrated seafood flavor.

非洲雞 ($150) 這道菜是一道辣味十足的澳門菜肴,將腌製雞肉與混合香
料、大蒜和椰奶融合在一起,味道非常風味獨特。
African Chicken - a spicy and flavorful Macanese dish that combines 
marinated chicken with a blend of spices, garlic, and coconut milk.

葡式烤鴨腿飯($140) 以油封鴨腿為主角,搭配葡式臘腸做陪襯。因為早
年葡萄牙以航海聞名,為了方便保存,所以在傳統葡萄牙菜裡面出現各
類醃肉入菜的機率相當高。油封鴨腿是將帶骨鴨腿肉以香料醃漬後,再
放入油中浸泡以慢火煮熟。這樣除了讓肉質變得柔軟可口,同時也能讓
肉中的油脂和香味得到保留。而葡式臘腸食用之前,必須先用烈火炙烤
過,除了可以將臘腸多餘的油脂析出之外,火烤之後的臘腸風味更棒!
Baked Duck Rice ($140) features oil-sealed duck leg as the main 
ingredient, paired with Portuguese-style sausage as a complement. Because Portugal was famous for its navigation in the early years, various marinated 
meats often appear in traditional Portuguese cuisine for the convenience of preservation. Oil-sealed duck leg is prepared by marinating bone-in duck 
leg meat with spices, then soaking it in oil and slowly cooking it over low 
heat. This not only makes the meat tender and delicious, but also preserves 
the fat and aroma in the meat. Before consuming Portuguese-style sausage,
 it must be grilled over high heat to remove excess fat and enhance its flavor.

木糠布甸($50)布甸是廣東話裡布丁的講法,澳門木糠布甸是一種傳統
的澳門甜點,通常用木糠、雞蛋、糖和牛奶製作而成。它的外觀像是一
個小型蛋糕,表面上有著金黃色的木糠(磨碎的餅乾屑),內部則是呈現
柔軟的布丁口感。以這款澳門必吃特色甜品來做結尾,真是舒服。
Serradura ($50) is a traditional dessert in Macau, known as "budin" in 
Cantonese. It is typically made with crumbled cookies, eggs, sugar, and 
milk. The dessert resembles a small cake with a golden-brown crumbled
cookie crust on the surface and a soft pudding-like texture on the inside.
Ending a meal with this must-try Macanese dessert is truly satisfying.
