這家叫做表嫂美食的小餐館,位於澳門本島下環地區,也就是我之前住
最多次的藝舍酒店附近,走路差不多10分鐘左右的距離。下環這邊已經
屬於澳門當地人的生活圈,所以美食小吃店相當密集,當然也有很多超
級市場可以血拚大採購。說真的像這種店沒人帶路,我可能一輩子都找
不到,更別說在這邊享用美食了。
The restaurant called "Biaosao Cuisine" is located in the neighborhood
of San Van in Macau, which is about a 10-minute walk from the
Yat Yuen Hotel where I used to stay frequently. San Van is already a
living area for local people in Macau, so there are many small restaurants
and snack shops, as well as many supermarkets for bulk purchases.
Honestly, without someone to guide me, I might never find a place like
this, let alone enjoy the delicious food here.
這家店很小,而且是非常小那種,聽說以前還沒搬過來時更小。不誇張,
我們一桌8個人坐好加上隔壁一桌,大概店裡就客滿3/4了說~
This shop is very small, and I mean very small - I heard that it was even
smaller before they moved here. I'm not exaggerating when I say that with
our table of eight and the neighboring table, the shop was about three-quarters
full.
看到桌上的卡式爐,想必等等一定有大菜要上桌,先跟我們家的雞雞合
照一下!因為我們這次去店家有稍微幫我們客製化,所以照片中的餐點
品項內容會跟店裡正式菜單上的有些許出入。價錢方面是以店內標準份
量的餐點註明給大家參考,澳門秤重1斤跟中國一樣是500g,不便之處
請見諒海涵!!
As we noticed the cartridge stove on the table, we anticipate a
hearty meal to come. Before that, let's capture a photo with my
rooster! It's worth mentioning that we made some customizations
to our order at the restaurant, so the dishes in the photos may
differ slightly from those on the official menu. Regarding pricing,
the menu items are priced based on the standard portion size
provided by the restaurant for your reference. Please keep in mind
that in Macau, one pound equals 500g, which is the same as in
China. We apologize for any inconvenience this may cause and
appreciate your understanding.
椒鹽九肚魚Crispy Fried Salt and Pepper Tofu Fish $62
這一道是澳門很常見的海鮮炸物,所謂的九肚魚,就是我們台灣很有名
的那個魚啦,因為肉質很嫩豆腐,在中國又稱豆腐魚。因為肉質細到很
容易散掉,所以大部分的烹調方式都是裹粉油炸,但我之前看過紀錄片
在中國也有拿來當串燒直火烤,感覺就相當好吃。表嫂的這道料理裹上
粉漿酥炸後,再撒上類似避風塘蟹使用的蒜酥,口感鹹香超好吃。
This is a common seafood dish in Macau, known as
"Nine-stomached Fish," which is also famous in Taiwan for its
tender and delicate flesh that resembles tofu, hence the nickname
"Tofu Fish" in China. Due to its delicate texture, it is often prepared
by coating with flour and deep-frying. However, I have seen in a
documentary that in China, it is also used for skewers and grilled
over an open flame, which seems to be delicious. Biaosao Cuisine's
dish coats the fish with a batter and deep-fries it until crispy, then
sprinkles it with garlic crumbs similar to those used in
wind-resistant crab, resulting in a savory and fragrant taste.
椒鹽粟米Salt and Pepper Corn $44
先不要說這個玉米沒什麼,這可是我至今吃過最鮮甜的炸玉米。吃了之
後整個晚上,我都在想這東西要怎麼複製呀?畢竟離開澳門之後,想吃只
能自己想辦法,然後我還沒想到~
Let's not dismiss this corn just yet, it was the freshest and sweetest
fried corn I've ever had. After eating it, I spent the entire evening
thinking about how I could replicate it. After all, once I leave Macau,
I'll have to figure out how to make it myself if I want to enjoy it again.
Unfortunately, I haven't come up with a solution yet.
雖然是油炸,但一點都不油膩,搭配蒜酥跟蔥花,真是極品~~

土魷肉餅Meat petty with dried squid $46
其實來到澳門,這肉餅一定要吃的。澳門的肉餅,是把豬肉打成滑,然
後在下去蒸或煎。所謂的滑就是肉糜的意思,也就是做成丸子最基本的
狀態。表嫂這一道菜,搭配乾魷魚下去蒸,我想山珍海味通通都在這一
盤裡面囉~

表嫂酸菜魚Sichuan Fish Hotpot with pickled mustard green
(生魚片Raw fish Slices$168/無骨鱸魚片Boneless Sea Bass Slices$218)
我們這一盆是生魚片的版本,這也許是我最愛這家店的一道菜,先不論
港澳魚生一定是活魚,這個酸菜的滋味,我至今還念念不忘。
This dish in front of us is the raw fish slices version, perhaps my
favorite dish at this restaurant. Regardless of the fact that Hong Kong
and Macau-style raw fish must be made with live fish, I still cannot
forget the taste of this pickled mustard green.
活魚切成薄片在相當夠味的酸菜鍋底裡面涮過,雖然只是涮過,但是鍋
底的酸菜、花椒、宮保等等的香氣完全留在魚片上。再加上活魚片本身
自然的鮮甜,連不吃飯的我都想跟老闆要碗白飯了。
Thin slices of live fish are briefly cooked in a deliciously seasoned
hot pot filled pickled mustard green, Sichuan peppercorns, and
spicy Kung Pao sauce. Although only briefly cooked, the fragrant
flavors of the hot pot's ingredients permeate the fish slices,
complementing the natural freshness and sweetness of the fish.
Even someone like me, who doesn't usually eat rice, is tempted to
ask the boss for a bowl of it.
海鮮大盤雞Seafood Big Plate Chicken Large(大)6-10人份 $798
這一鍋有兩隻雞加上八隻螃蟹,你說這湯能不鮮嗎??
This pot has two chickens and eight crabs in it. Do you think this
soup wouldn't be delicious?
除了原本鍋裡有的基本食材2隻雞、 12隻鮑魚、 18隻蝦、2斤白蜆、薯仔、
洋蔥、大白菜之外,我們這一鍋又追加了聖子仔(活竹蛤,$100~160/斤),
然後螃蟹因為有8人所以總數追加到8隻,一整鍋東西多到滿出來真的相當
不合哩,哈哈哈哈~
In addition to the basic ingredients of 2 chickens, 12 abalones, 18
shrimps, 2 catties of clams, potatoes, onions, and Chinese cabbage
that were originally in the pot, we also added live bamboo clams
(also known as razor clams) at $100-160 per catty. And since there
were 8 people, we increased the total number of crabs to 8. The pot
was so full that it was quite overflowing, haha~
台山黃鱔煲仔飯Taishan Yellow Eel Claypot Rice 中$188/大$288
來到澳門怎能錯過煲仔飯?這家店的台山黃鱔煲仔飯一出場就驚艷四方,
先不說吃起來的口感,光上桌前一路從廚房飄過來的香氣就嚇死人了~
When in Macau, one cannot miss out on trying claypot rice, and
this restaurant's Taishan yellow eel claypot rice is simply amazing.
Not only does it taste delicious, but the aroma wafting from the
kitchen as it makes its way to the table is simply heavenly.
因為是從生米帶料以土鍋煲出來的鍋飯,整個食材精華跟醬汁已經完全
被米粒吸收,一整個很像我們台灣的油飯,但吃起來的感覺卻是鮮甜加
清爽。如果不是前面幾道已經吃得很撐,這個我連扒三碗都可以。
The rice is cooked in a clay pot with raw ingredients, allowing the
essence of the ingredients and sauce to be fully absorbed by the rice
grains. It's similar to the Taiwanese oil rice, but with a fresh and
sweet flavor.If I hadn't already eaten several courses beforehand,
I could easily have polished off three bowls of this dish.
