看我一開始提到24H營業,相信很多老台中尤其是夜貓子應該就知道我說的這
家店就是南屯蕭了。這家店其實已經很有歷史,後來也在很多地方開枝散葉,
而我是一開始就在北屯中清路上這家吃到現在。我還記得當年第一次來用餐,
甚至這家店的正式名稱"南屯蕭"都還沒有定名,早期我只能以蕭記南屯爌肉飯
來稱呼他。
From what I initially mentioned about 24-hour operation, I believe many
people in Taichung, especially night owls, should know that the restaurant
I'm referring to is Nantun Xiao. This restaurant actually has a long history
and has since branched out to many locations. However, I have been going
to the original one on Zhongqing Road in Beitun since the beginning. I still
remember my first time dining there, and even at that time, the restaurant didn't
have an official name yet. I could only refer to it as "Xiao Ji Nantun Braised Pork Rice."
先點餐後入座,菜單就貼在餐檯上,這次去發現腳筋系列跟腿仁飯都沒有供
應,是因為最近豬價太貴的關係嗎?希望不是永遠停售,因為很好吃啊~~~

I noticed that the pork tendon and pork leg rice dishes are not available
this time. Is it because of the recent high pork prices? I hope it's not a
permanent discontinuation because they are delicious!
這一天是一大早要開車北上桃園搭機去澳門,因為一大早9點多的飛機,所以五
點多就擺駕出門,所以這一餐是我的早餐囉~開車不要吃太飽會睡著,所以一湯
一飯剛剛好。
This morning, I have to drive up to Taoyuan to catch a flight to Macau.
Since my flight is at around 9 o'clock in the morning, I need to hit the
road at around 5 o'clock. Therefore, this meal is my breakfast. I don't
want to eat too much as it may make me feel drowsy while driving, so
a bowl of soup and a serving of rice will be just right.
說起腳庫飯($65)這可是爌肉飯之中的代表性餐點,有別於三層肉是天然肉塊切
成,製作腿庫飯可是挺費人工,因為這帶皮肥肉及內圈那一塊瘦肉,可是用手
工一塊一塊組合用竹籤串起後再下鍋滷至熟成定型。
When it comes to "pork leg rice" ($65), this is a representative dish
among braised pork rice. Unlike three-layered pork which is made
of natural meat chunks, preparing pork leg rice is quite labor-intensive.
This is because it requires assembling a piece of skin with fatty meat
and a lean meat piece from the inner circle one by one by hand, then
skewering them with bamboo sticks and braising until fully cooked
and formed.
可能是因為24小時營業不停鍋的關係,在南屯蕭永遠可以吃到最新鮮的腿
庫肉,而且也可能因為不斷補充新鮮的肉塊下鍋滷,所以這家店每一塊肉
都是超級漂亮。像大部分的店如果進打烊去買,很多不是滷過頭,就是泡
在滷汁裡泡到肉變瘦肉柴肥肉爛,然後又死鹹,來這吃完全沒這困擾。
Perhaps due to the fact that the pots never stop boiling in Nantun Xiao,
customers can always enjoy the freshest pork leg meat. Additionally,
because they continually add fresh meat to the braising liquid, every piece
of meat served is incredibly attractive. Unlike most other shops where if
you go to buy approach they close, the meat is either over-braised or has
been soaking in the braising liquid for so long that it becomes tough, fatty,
or overly salty. However, at this shop, customers do not have to worry
about these issues.
這裡的白飯屬於粒粒分明帶點硬度,淋上滷汁後的飯越嚼越香。
The rice here is distinct in its individual grains and has a slight firmness
to it. When drenched in the braising sauce, the rice becomes increasingly
fragrant as you chew.
店裡的酸菜自取隨便吃,爌肉飯跟酸菜真的超速配。
虱目魚皮湯($55) 用純虱目魚皮煮的,沒有再加魚漿,所以魚皮必須非常新
鮮才有辦法吃。
"Soup with Fresh Milkfish Skin ($55)". It is made by boiling pure
fresh milkfish skin without adding any fish paste, so the fish skin
must be very fresh in order to be edible.
如果覺得虱目魚肚湯一碗$100吃得有壓力,那魚皮湯真的是很不錯的選擇,
除了可以吃到屬於虱目魚的風味,還能順便補充滿滿膠原蛋白喔~

soup, then fish skin soup is really a great option. Not only can you
taste the unique flavor of threadfin fish, but you can also supplement
your body with plenty of collagen at the same time.
