如果對花蓮小吃有點概念,相信扁食一定是大家去到花蓮必吃的選項之一。
日前媒體報導丟出了一顆震撼彈,那就是大家很熟悉的老店-戴記扁食,因
為老闆年事已高,決定營業到2023/08/31為止,之後就正式收攤。相信許多
喜歡戴記扁食的朋友,看到這一則報導應該都會覺得很不可思議,但有時候
社會變遷就是這樣。有趣的是,花蓮要收攤的戴記扁食其實並不是總店,他
的創始店其實在美國加州矽谷,但不管是戴記、花蓮、或是很有名的液香扁
食,其實都是同一家人創出或是經營的店。而許多人覺得戴記是家90年老店
也不完全正確,應該是說自第一代挑扁擔的老老戴開始算才對,花蓮這家戴

If you have some familiarity with Hualien snacks, I'm sure you must be aware that
Bian Shi is definitely one of the must-try options when visiting Hualien.
Recently, the media has reported some shocking news: the well-known old establishment,
Dai Ji Bian Shi, has made a decision due to the advanced age of the owner. They have
announced that the business will operate until August 31, 2023, after which they will
officially close their doors. I believe many friends who enjoy must find this news quite
unbelievable, but sometimes, societal changes unfold in such ways.
Interestingly, the Hualien branch of Dai Ji Bian Shi that is closing down is not the original
store. The founding store of this eatery is actually located in Silicon Valley, California,
USA. However, whether it's Dai Ji, Hualien, or the well-known Ye Xiang Bian Shi, they are
all establishments created or managed by the same family. Moreover, the perception that
is an age-old establishment isn't entirely accurate; the legacy truly began with the first-
generation bearer of the bamboo shoulder pole for selling Bian Shi. The Hualien branch
of has a history of only around 30 to 40 years.
參加完阿波舞祭,回到台灣後馬上直奔花蓮光復參加馬太鞍部落豐年祭,
回程剛好經過花蓮就順便吃一下也做個紀念。

I never thought I'd get to eat there before they closed down after watching the news.
Coincidentally, I attended the Awa Dance Festival in Tokushima, Japan this year,
and after returning to Taiwan, I immediately headed to the Harvest Festival of the
Matian Ancestral Tribe in Hualien. On the way back, I happened to pass by Hualien
again, so I decided to grab a bite to eat and make it a memorable stop.
扁食其實就是餛飩的一種,我們台語不管是扁食或是餛飩都一律叫做扁食。
若要真的去解釋扁食跟雲吞差別,我想從外型就可以很明顯看得出來。一般
來說,扁食裡面的內餡基本上就只有肉餡,有許多版本甚至連芹菜、蔥花這
類辛香料都沒有,只有單純調味過的肉餡。而雲吞就比較常看到有包肉跟其
他餡,如蝦仁這些。
"Bian Shi" in fact is a type of wonton, and in our Taiwanese dialect, whether it's Bian Shi
or wonton, we simply call it "Bian Shi."
If we were to explain the difference between "Bian Shi" and "wonton," I think it's quite
apparent from their appearance. Generally, the filling inside Bian Shi is typically just
meat filling. In many versions, it may not even have ingredients like celery or green
onions; it contains only seasoned meat filling. On the other hand, wonton often includes
a variety of fillings, such as meat and shrimp.
店裡只有賣一種餐點就是扁食湯,說真的很多賺錢的店真的都只有買一種
東西,就轉到把隔壁整排房子都買下來了~哈哈!說真的,到現場看煮扁食
的大姐們手都沒有停下來過,外面還一大排嗷嗷待哺的食客,有多忙碌請
自己想像~

如果真的要算台灣第一位行腳美食部落客,我相信4、5、6年級的朋友們
應該都能認同非前總統蔣經國莫屬。在以前那個資訊不發達的時代,到了
一個陌生的地方,只要看到牆上掛子蔣經國來店裡用餐的照片,那這家店
基本上就不太可能踩到雷。
If we were to talk about the earliest and most influential food blogger in Taiwan,
I think those born in the 1950s to 1970s would likely agree that it's none other than
former President Chiang Ching-kuo. During a time when information wasn't easily
accessible, if you found yourself in an unfamiliar location, seeing a picture on the
wall depicting Chiang Ching-kuo dining at a particular restaurant was a reliable
indication that the establishment was a trustworthy choice.
一、二樓都設有用餐區,這天雖然也是排隊,但是差不多只排了20分鐘左
右就可以進餐廳了。店家好像也有稍微做人流管制,所以基本上在裡面用
餐不會因為進來一大堆人鬧哄哄,冷氣也比較涼爽。
Both the first and second floors have dining areas. Despite the queue on that day, we
only had to wait for about 20 minutes before being able to enter the restaurant. It seems
that the establishment has also implemented some crowd control measures, so dining
inside is not chaotic due to a sudden influx of people. The air conditioning is also cooler.
現在扁食一碗$80,相信時光也將永遠停留在$80一碗囉~剛剛看了一下他
們矽谷總店的價位,扁食湯小碗的US$5,也就是差不多$160左右,其實在
美國也不算太貴。當然,在美國吃中式餐點本來就是比較經濟的選項。
扁食湯Bian Shi Soup $80
餛飩皮包著精肉餡,吃起來肉質鮮美、味道純粹。
Currently, a bowl of Bian Shi costs $80, and I believe that the price will forever
remain at $80 per bowl. I just checked the prices at their Silicon Valley main branch,
and a small bowl of dumpling soup is priced at US$5, which is roughly around $160.
Actually, this isn't considered too expensive in the United States. Of course, eating
Chinese cuisine in the US is generally a more economical option.
扁食湯Bian Shi Soup $80
餛飩皮包著精肉餡,吃起來肉質鮮美、味道純粹。
Wonton wrappers encase a filling of savory minced meat, delivering a deliciously
tender and pure flavor.
湯頭清清如水,基本上就是傳統的油蔥味精湯,好入口也不搶扁食的原味。
總之,無論如何這就是我這一輩子最後一碗戴記扁食。者是不用擔心吃不
到,因為跟20年前我帶團去花蓮時只有幾家相比,現在花蓮市區賣扁食的
一大堆,而且應該跟液香、戴記等老店多少都有些淵源。接下來哪一家好
吃,就純粹看個人喜好囉~
The soup base is clear and clean, like water, essentially a traditional broth with the
flavors of oil and scallions, simple and easy on the palate without overwhelming the
Bian Shi. In any case, this will be the last bowl of Dai Ji Bian Shi I'll have in my lifetime.
You don't need to worry about not being able to find it because compared to just a few
places when I led a tour to Hualien 20 years ago, there are now plenty of places selling
Bian Shi in Hualien City, and they probably have some connection with old shops like
Liquid Fragrance and Dai Ji. Which one is the best to eat next is purely a matter of
personal preference!
