不知道滿足了多少人在金門軍旅生涯中的胃。而炒泡麵,現在在台灣本
島市面上要吃到,也已經不是一件難事。炒泡麵大家多少應該都有吃過,
沒吃過也應該有看過或聽說過。但是"炒涼麵",別說吃了,冰箱我可是
連聽都沒聽過。到底怎麼一回事?讓我們繼續看下去!
In the past, Kinmen was a battlefield, and due to a lack of supplies, local vendors began adding extra ingredients to stir-fry instant noodles, satisfying the hunger of many soldiers during their military service on the island. Nowadays, stir-fried instant noodles are no longer difficult to find on the main island of Taiwan. Most people have likely tried stir-fried instant noodles before, and even if they haven’t eaten it, they’ve probably seen or heard about it. However, as for "stir-fried cold noodles," not only have I never eaten it, I hadn’t even heard of it until recently. So, what's the story behind it? Let’s keep reading to find out!

這天晚上跟我龜密兩人原本興致勃勃想去旱溪夜市覓食,結果夜市攤位
幾乎都是牛排跟蒙古烤肉、關東煮炒麵這些,重複性很高。這不打緊,
我們還小小踩到雷。沒待多久離開旱溪夜市,兩個人開著車在台中市區
亂晃。本來晃到豐原的時候,想轉去廟東夜市看看。正準備轉最後一個
彎準備停車要去廟東,我龜密突然問我:你有吃過炒涼麵嗎?炒....涼麵???
這也太衝突了吧!!!
That evening, my close friend and I were all excited to head to Hanxi Night Market to hunt for food, but it turned out that most of the stalls were selling steak, Mongolian BBQ, oden, and stir-fried noodles, with a lot of repetition. That wasn’t the worst part, though—we also had a bit of bad luck. We didn’t stay long and left Hanxi Night Market, then drove aimlessly around Taichung City. When we got to Fengyuan, we thought about checking out Miaodong Night Market. Just as we were about to make the last turn and park the car to visit Miaodong, my friend suddenly asked me, "Have you ever tried stir-fried cold noodles?" Stir... cold noodles??? That’s way too contradictory!
後來在他帶路下,我們來到這家叫做老油條的豆漿店。其實這家店,跟
我們熟悉的永和豆漿那種類似,只是他開的時段比較特殊,是宵夜場到
早點。每天晚上8:30開始,一直營業到隔天早上10:30,營業時間高達14
個小時。
Later, following my friend’s lead, we arrived at a soy milk shop called "Lao You Tiao." This place is actually quite similar to the Yonghe Soy Milk shops we're all familiar with, except its operating hours are a bit unusual, catering to the late-night crowd until early morning. It opens at 8:30 PM every night and stays open until 10:30 AM the next day, operating for a full 14 hours straight.
雖然開在離鬧區有 一段的小巷裡,但是我們到的時候是晚上11點左右,
裡頭幾乎已經快坐滿。
Although it’s located in a small alley some distance away from the bustling areas, when we arrived around 11 PM, the place was almost full.
Exactly, that was the scene when we arrived, around 11 PM on a Friday night.
As I mentioned earlier, this place is quite similar to Yonghe Soy Milk shops, and the ordering process is pretty much the same.
The menu, as shown in the picture, offers reasonably priced items.
For the food on the counter, you can grab it yourself, and for items that need to be made, just place your order with the boss lady. Once it’s ready, they’ll call you to pick it up. As for payment, the boss is very laid-back—you can pay beforehand or after you’ve finished eating.
The pan-fried dumplings are freshly made and cooked on the spot, and of course, with something like that, you definitely can’t pass it up!

The drinks are in the fridge, so feel free to help yourself. And then there’s the star of this story—the cold noodles.
接下來要跟大家解說一下炒涼麵的點法,首先你先要去冰箱取出涼麵。
接著的動作,就是拿去煎檯那邊說我要炒,然後店家就會幫你炒了。接
下來,就稍微等候一下,你的炒涼麵就出現了。
Next, let me explain how to order stir-fried cold noodles. First, you need to grab the cold noodles from the fridge. Then, take them over to the cooking station and simply tell the staff, "I want it stir-fried." They’ll take care of the rest. After a short wait, your stir-fried cold noodles will be ready!
桌上醬料有四種,醬油膏、甜辣醬、辣油,以及蒜蓉辣醬油(這個好)!
On the table, there are four types of condiments: thick soy sauce, sweet chili sauce, chili oil, and garlic soy sauce with chili (this one’s great)!
Since my close friend couldn’t finish their food, I got to enjoy all of this by myself—wahaha!
The pork chop (30 NTD).
Soy sauce-marinated pork slices are pan-seared and then cut into bite-sized pieces. They’re fragrant and flavorful with a nice char, making them a perfect pairing with steamed buns or crispy flatbreads
Pan-fried dumplings (6 NTD each) — take as many as you want, there’s no minimum order.
To be honest, I personally think these should be called "potstickers" instead of dumplings, right?
The freshly wrapped and pan-fried dumplings might not be the kind that bursts with juice, but they’re definitely super satisfying to eat!
Stir-fried cold noodles (40 NTD) — This is the legendary stir-fried cold noodles. When cold noodles are stir-fried, an egg is always added, and the sauce used is the sesame sauce that typically comes with cold noodles. To be honest, this was my first time eating hot cold noodles in my life. Before taking a bite, I was seriously puzzled and couldn't wrap my head around it!
Unexpectedly, the texture of these stir-fried cold noodles was surprisingly delicious. It’s like stir-fried noodles, but without the greasiness typical of them. It has the element of sesame sauce, yet the overall taste is completely different from sesame noodles. Somehow, before I even realized it, I had polished off the entire plate!
冰豆漿(15元) 最後來杯冰豆漿漱漱口,感覺很不錯喔。
Iced soy milk (15 NTD) — Finally, I ended the meal with a cup of iced soy milk to cleanse the palate. It felt pretty refreshing!
