阿貴麵店位於台中市東區自強街25號,鄰近合作新村,已有約50年的歷史,是當地知名的老字號麵店。目前該店由第二代接手經營,雖然網路上有許多網友說現在的風味不如第一代老老闆,但我沒吃過第一代,現在這碗卻讓我吃了後懷念起小時候在眷村的風味 - 那個只有在腦海裡回味,卻永遠不可能再嚐到的滋味。

A-Gui Noodle Shop is located at No. 25, Ziqiang Street, East District, Taichung City, near Cooperative New Village. With a history of around 50 years, it is a well-known and long-established noodle shop in the area. Currently, the shop is operated by the second generation. Although many netizens have commented online that the flavor nowadays does not quite match that of the original owner, I never had the chance to try the first generation’s cooking. Yet, this bowl of noodles now reminds me of the taste from my childhood in the military dependents' village—a flavor that exists only in my memories and can never be savored again.

承載青春記憶的眷村小店
一家真的很不起眼的小店,卻不知道負載了多少人的青春歲月記憶。要知道以前物資缺乏的年代,能夠到村子口吃下碗麵吃,那是一種多麼奢侈的幸福!店裡頭以大小圓桌為主,座位數不多,所以尖峰時間跟別人併桌難免,如果有社恐症的朋友,建議提早於餐期尖峰前前往。
桌上的調味料也是麵店基本配置,有醬油、辣油、胡椒粉、辣椒醬。最重要的這裡是台中,所以紅色那瓶裡面就是裝東泉。

A truly unassuming little shop, yet it carries the memories of so many people's youthful years. Back in the days when resources were scarce, being able to enjoy a bowl of noodles at the entrance of the village was such a rare and luxurious happiness!
The shop primarily uses round tables of various sizes, with limited seating. During peak hours, sharing a table with strangers is inevitable. If you’re someone who struggles with social anxiety, it’s recommended to visit before the breakfast rush.
The condiments on the table are the standard noodle shop setup: soy sauce, lard oil, pepper powder, and chili sauce. Most importantly, since this is Taichung, the red bottle contains none other than the famous Tung Chun chili sauce.
經典麵食與白滷味
店裡供應的麵點有黃(油)麵、白麵、米粉、粿條,還有台灣特有的雞絲麵。也許現在在外面想要吃到粿條並不容易,但是在我小時候那年代,粿條可是每家麵攤幾乎都吃得到的標配,以前統一還出過泡麵版的粿條咧。
除了都可乾吃跟湯麵外,還有麻醬麵。湯品有三種,除了餛飩湯 45 元之外,其他兩樣都是 30 元。至於滷味只有五種,全部都來一份差不多 70 元,再貴也沒辦法了。

The shop offers a variety of noodle dishes, including yellow (oil) noodles, white noodles, rice vermicelli, flat rice noodles (kway teow), and Taiwan's unique shredded chicken noodles. Nowadays, it may not be easy to find kway teow at other places, but back when I was a kid, kway teow was a standard option available at almost every noodle stand. In fact, even Uni-President (a major Taiwanese food brand) once released an instant noodle version of kway teow!
As for noodles, you can have them served dry or in soup, and they also offer sesame paste noodles. There are three types of soups. Apart from the wonton soup at 45 NTD, the other two are priced at just 30 NTD. The selection of lu wei (braised snacks) is simple, with only five options. Ordering one of each costs about 70 NTD—expensive, but unavoidable.
招牌白乾麵與手工餛飩湯
滷味簡單切了豆皮、海帶以及滷蛋,一共 45 元。滷味是眷村常見的白滷,雖然顏色沒有很深,但是味道都是有進去的。
白乾麵小碗 40 元。採用的是一般的陽春麵扁麵條,煮好的麵加上青菜後,淋上店家特製的肉燥,就完成這碗帶有濃濃眷村風味的麵。雖然他家的肉燥只有豬絞肉跟豬油蔥,而且看起來顏色也很淡,神奇的是就像嘉義米糕的肉燥一樣也是白白的,卻非常夠味。麵條吃在嘴裡很滑口,味道剛剛好,不知不覺就吃得碗底朝天囉~
餛飩湯 45 元,每碗有差不多 9 顆手工餛飩,光價格就比第二市場某肉包店實惠。這種煮湯的外省餛飩組成的內容很簡單,其實就是餛飩皮包精肉末。調味部分應該也只有鹽、味精、胡椒粉這些而已。雖然組成的內容看起來好像沒什麼,但是會做的店家煮出來的餛飩湯,硬是美味不是蓋的。
隨著 40 年前眷村陸續改建拆除,許多兒時的美味回憶一點一滴也隨著故人悄悄地消失。這種道地的眷村小麵店吃一天也就少一天,真是不勝唏噓呀~~

The braised snacks I ordered included bean curd skin, seaweed, and a braised egg, totaling 45 NTD. These are prepared using the white braising style, which is commonly seen in military dependents' villages. While the color isn’t particularly dark, the flavors are rich and well-infused.
A small bowl of dry noodles costs 40 NTD. The shop uses the standard flat-style yang chun noodles. Once the noodles are cooked and topped with some greens, the finishing touch is the shop's special minced pork sauce, resulting in a dish full of the nostalgic flavors of the dependents' villages. Although their minced pork sauce contains only ground pork, lard, and fried shallots, and the color appears quite light, it’s surprisingly flavorful—much like the white-colored minced pork sauce used in Chiayi’s rice cakes. The noodles are smooth and easy to eat, and the seasoning is just right. Before you realize it, you’ll have emptied the entire bowl!
The wonton soup, priced at 45 NTD, comes with about nine handmade wontons per bowl, making it a better deal compared to a certain steamed bun shop in the Second Market. These boiled Northeastern-style wontons are very simple in composition, typically consisting of a thin wonton skin wrapped around seasoned minced meat. The seasoning likely includes just salt, MSG, and pepper. While the ingredients sound basic, a skilled shop can still turn this into a delicious bowl of wonton soup.
As the military dependents' villages gradually disappeared over the past 40 years due to redevelopment and demolition, many childhood food memories have quietly faded along with them. Authentic small noodle shops like this one are becoming rarer with each passing day, making it all the more bittersweet to savor them while we still can.
